Simmer potatoes. Strain, then return them to the pan. Cook.
Arrange potatoes on a prepared baking sheet pan. Flatten them with the bottom of a glass.
Mix butter, garlic, kosher salt, pepper, and parsley. Brush the butter mixture over the potatoes.
Bake and let cool.
