Line a rimmed quarter-sheet pan with parchment paper or a silicone baking mat and set aside.
In a medium mixing bowl, combine 2 cups full-fat plain Greek yogurt with 2 tablespoons pure maple syrup and 1 teaspoon vanilla extract.
Using an offset spatula spread the yogurt into an even thin layer (about ¼-inch thick) on the lined baking sheet. Sprinkle evenly with toppings of choice.
Place baking dish into freezer and freeze for at least 3 hours, or overnight, until frozen solid.
Once frozen, remove the pan from the freezer and invert the bark onto a cutting board and remove the parchment paper. Break or cut the bark into 12 pieces. Serve immediately, or place the frozen bark into a freezer-safe container and store in the freezer for up to 1 month.
