Freezing yogurt to make a creamy, sweet treat is easy, but not foolproof. For the best results, follow these key tips.

  • Use full-fat Greek yogurt. Nonfat Greek yogurt or regular yogurt can make for icy bark, and we are going for rich and creamy.
  • Sweeten to taste. Adding honey or maple syrup with vanilla extract keeps this dessert lower in sugar, but you can opt ot start with vanilla Greek yogurt for a really sweet treat.
  • Line the tray with parchment paper or a silicone mat. Otherwise, it will be impossible to remove the frozen yogurt bark from the tray.

  • Full-Fat Greek Yogurt: For the creamiest yogurt bark, use full-fat Greek yogurt. I recommend using plain store-bought Greek yogurt, Instant Pot Greek yogurt, Instant Pot Cold Start yogurt, or, for a dairy-free alternative, Instant Pot coconut milk yogurt.
  • To Sweeten: Maple syrup or honey. Omit if starting with vanilla Greek yogurt.
  • To Flavor: A bit of vanilla extract. Omit if starting with vanilla Greek yogurt.
  • Toppings for Yogurt Bark: Berries, chopped fruit, granola, chocolate chips, nut butter, sprinkles, nuts--whatever you love!

How To Make Frozen Yogurt Bark

Mix, spread, top, freeze -- it is about as easy as it gets!

  1. Combine. Mix Greek yogurt with maple syrup and vanilla extract until creamy and smooth. Skip this step if starting with vanilla yogurt.

  1. Spread. On a lined baking sheet, spread the yogurt mixture into a thin, even layer. I find an offset spatula the best tool for this job.
  2. Add Toppings. Sprinkle toppings of your choice evenly over the yogurt bark. I like to gently press them into the yogurt to help ensure they stick.

    1. Freeze. Place the tray into a freezer and freeze until solid. Overnight is best.
    2. Cut and Enjoy! Once frozen, remove the yogurt bark from the baking sheet by lifting up the parchment paper or baking mat. Then cut or break into large chunks.

    Flavor Ideas & Variations

    Use your imagination to top the yogurt bark with any toppings you desire. Below are a few ideas to inspire you.

    • Up the Protein: Add 1-2 scoops of your favorite protein powder to the yogurt before freezing. Omit vanilla extract and maple/honey if your protein powder is flavored.
    • S'mores: Add crushed graham crackers, mini marshmallows, and chocolate chips.
    • Chocolate Covered Fruit: Add sliced strawberries, whole raspberries, or pitted and sliced cherries along with chocolate chips or chocolate chunks.
    • Peanut Butter Chocolate: Swirl yogurt with peanut butter and top with chocolate chips.
    • Rocky Road: Top with marshmallows, chocolate chips, and chopped peanuts.
    • Pumpkin Spice: Along with vanilla extract and maple syrup, add ⅓ cup of pumpkin puree and 1 teaspoon pumpkin pie spice to the yogurt. Top with pepitas, dried cranberries, and/or chopped walnuts.

    Made with just 3 wholesome ingredients and toppings of your choice, Frozen Yogurt Bark is a refreshing frozen treat that is easy to make, fun to eat, and endlessly adaptable.

    Ingredients 

    • 2 cups full-fat plain Greek yogurt
    • 2 tablespoons pure maple syrup, or honey
    • 1 teaspoon vanilla extract
    • 1 cup toppings of choice, berries, chocolate chips, candies, etc.

    Instructions 

    • Line a rimmed quarter-sheet pan with parchment paper or a silicone baking mat and set aside.
    • In a medium mixing bowl, combine 2 cups full-fat plain Greek yogurt with 2 tablespoons pure maple syrup and 1 teaspoon vanilla extract.
    • Using an offset spatula spread the yogurt into an even thin layer (about ¼-inch thick) on the lined baking sheet. Sprinkle evenly with toppings of choice.
    • Place baking dish into freezer and freeze for at least 3 hours, or overnight, until frozen solid.
    • Once frozen, remove the pan from the freezer and invert the bark onto a cutting board and remove the parchment paper. Break or cut the bark into 12 pieces. Serve immediately, or place the frozen bark into a freezer-safe container and store in the freezer for up to 1 month.

    Notes

    Yogurt: It is best to use plain, full-fat Greek yogurt when making yogurt bark. This will ensure a rich treat that does not form ice crystals when frozen and that you can control the added sugar in this frozen dessert. Coconut milk yogurt is a great non-dairy option. 
    Serving Tip: It melts quickly, so slice or break it right out of the freezer and return any leftovers promptly.
