I am so thrilled you stopped by to get to know me better! I wish we could gab over a latte and muffin, but in the meantime, let me tell you a bit about myself and why I am A Mind “Full” Mom.
About A Mind “Full” Mom
A Mind “Full” Mom started as a way to fill YOUR mind with easy, whole food, family-approved recipes. My mind was just “full” of ideas I wanted to share with you–hence the play on the word mindful.
A Mind “Full” Mom has evolved over time, but the focus is still the same–Real foods for real families on real budgets.
Simple, wholesome recipes that are not made with fancy ingredients or make your kids run for the hills. These are tried and true recipes that please my kids and my VERY picky husband.
A lot of the recipes you will find here are classic recipes given a face-lift with more wholesome ingredients–no high fructose corn-syrup, hydrogenated oil, food colorings, or msg. I do opt for whole grains over white flour and natural sugars over granulated sugar, but I do believe they have their time and place in moderation–like this Salted Caramel Mocha Bundt Cake.
Hi! I am Kristen! I love sharing my recipes and stories with you–the good, the bad, the embarrassing!
I am married to a man who grew up on processed foods and the mom of two picky-kids. Meaning my recipes have to go through a lot of cristicism before they hit the blog–which is a good thing for you and your picky palates.
But I love my family dearly and they are my biggest cheerleaders and the sweetest taste-testers EVER.
Another thing you should know about me is that I have Cystic Fibrosis. And shortly after my late in life diagnosis, both my kids were diagnosed as well.
Cystic fibrosis is a progressive, genetic disease that causes persistent lung infections and prevents the release of digestive enzymes that allow the body to break down food and absorb vital nutrients. This plays a huge role in our lives and in our diets. I view it as I never know what my body will choose to absorb, so I want to be sure that I what I consume is as wholesome as it can be to help nourish my body the best way I can.
We are warriors in this house. We get up and are intentional about what we eat and how we take care of ourselves. We also are sure to smile and give lots of hugs–and cherish every moment that God gives us.
I am going to be REAL with you! If you want someone polished and dressed to the nines–look elsewhere! If you want a girlfriend that has your back, will cheer you on, bring you pizza in the middle of night (YES, I eat pizza), cry with you, be honest with you about the hot mess I can be, then THIS is the place to be.
I want to make living a healthy and intentional life EASY for you!
