Baked instead of fried, this recipe for Tuna Cakes is lower in fat, yet every bit as delicious and crispy as the classic fried version.

what you need:

• olive oil • green onions • flaked albacore tuna • eggs • panko breadcrumbs • mayonnaise • seasoned salt • minced garlic • lemon zest and juice

Saute the green onion and allow to cool. Meanwhile, mix together the eggs, bread crumbs, onion, garlic, seasoned salt, mayonnaise, and the juice and zest of the lemon. Add the tuna and stir.

 Form the tuna mixture into patties.

Bake on both sides. Allow to cool before serving.
