Squash Salad

Roasted butternut squash, sweet pears, tart dried cranberries, sharp feta and a fresh Apple Cider Vinaigrette marry together to create simple, healthy salad that is filled with robust flavors.

what you need:

For the Roasted Squash: • butternut squash • olive oil • salt For the Salad: • mixed baby greens • dried cranberries • feta cheese • barlett pear • walnuts For the Apple Cider Viniagrette: • Apple Cider Vinegar • honey • garlic • salt • pepper • extra virgin olive oil

Toss the squash in oil, then season with salt and pepper. Roast and let cool. Next, whisk together the ingredients for the apple cider dressing.Then, toast the nuts.

Mix the greens with some of the dressing. Top with the roasted butternut squash, pears, cranberries, and optional walnuts. Toss and serve with the additional dressing.
