You only need a few ingredients and less than 30 minutes to make these flavorful, hearty, healthy Veggie Fajitas.

what you need:

• olive oil • onion • bell peppers • garlic • portobello mushrooms • smoked paprika • onion powder • black pepper • cumin • salt • lime zest and juice • cilantro • tortillas, avocado, cheese, sour   cream, tomatoes, etc for serving

Saute the peppers and onions first.

Then, add the mushrooms and saute. Stir in the zest and juice of a lime.

Serve on tortillas and top as desired.
