Make fluffy, fork-tender potatoes in the Instant Pot, or any electric pressure cooker, every single time using this recipe for Instant Pot Baked Potatoes.
Pour 1½ cups of cold water into the inner pot. Place a trivet or metal rack inside the inner pot, so that the potatoes do not sit in the water, but above.
Scrub sweet potatoes and pierce them several times with a fork or knife. Place the sweet potatoes on the trivet, stacking on top of each other if needed.
Secure the lid on the Instant Pot, lock the lid, and ensure the vent knob is locked in the seal position.
Using the manual or pressure cook button, set to cook on High Pressure, using the following cook times: 12 minutes for small potatoes (2-3 inches in diameter or 5-7 ounces)16 minutes for medium potatoes (3-4 inches in diameter or 8-10 ounces)22 minutes for large potatoes (4-4.5 inches in diameter or 11-13 ounces)26 minutes for extra-large potatoes (5 inches in diameter or 15-16 ounces)
Once the cook time has elapsed, allow pressure to naturally release for at least 10 minutes before doing a quick release of pressure. You can also opt to let pressure release fully on its own without impacting results. Remove the potatoes from Instant Pot and serve up with whatever toppings you like.
Option For Crispy Skin: If desiring crispy skin, brush the pressure-cooked potatoes with olive oil and sprinkle with salt, and place onto a baking sheet. Bake at 400℉ for 10 minutes or broil for 2-3 minutes per side until crispy.
