Fall meals don't need to be complicated to be comforting. This week's meal plan includes a Sunday roast chicken, a cozy pot of soup, a few quick skillet dinners, and some easy ways to turn leftovers into something completely different.
I've also included several ingredients you can use more than once throughout the week, so you can save money, cut down on food waste, and avoid buying an entire bunch of something when you only need two tablespoons.

Tips for this Week's Meal Plan
- Sunday: Roast a chicken large enough to enjoy for dinner and still have 3 cups of cooked chicken for Monday's casserole. Depending on your family's appetite, you may want to roast two chickens or purchase an additional rotisserie chicken. I also love using extra chicken to make chicken salad for lunches. While the oven is on, make extra roasted potatoes for Friday.
- Monday: Tonight's Chicken Enchilada Casserole takes only 5 minutes to assemble using leftover chicken. Save time with store-bought enchilada sauce. Buy a larger package of tortillas and use the remaining tortillas for Thursday's bean burritos.
- Tuesday: Minestrone makes good use of inexpensive pantry staples, including canned beans and pasta. Feel free to replace the spinach with 2 cups of diced cabbage (add before pressure cooking) since you are using cabbage later this week. Otherwise, use spinach and enjoy the leftovers in eggs or salad throughout the week.
- Wednesday: Prep extra rice to make assembling tomorrow night's burritos that much easier.
- Thursday: The optional pumpkin puree adds nutrition to the burritos, but you can skip it to avoid opening a can you'll struggle to finish (or use it to make the pumpkin muffins suggested for snacks). Make extra burritos for lunches or to freeze for another busy day.
- Friday: A single head of cabbage usually provides more than the recipe requires, so unless you used some for the minestrone earlier in the week, slice to use it in salads OR freeze the remainder to add to soups as desired.
- Saturday: Instant Pot Beef Stew is a great way to finish the week using the remaining potatoes, carrots, onions, and garlic. Yukon gold or red potatoes work well, so there's no need to purchase another variety. You can skip the red wine and use additional beef broth, and leftovers freeze beautifully for a future meal.
