The Easiest Sausage Dip
Every party needs a good dip for chips or crackers and this Rotel Sausage Dip is one of the best options!
This simple sausage dip only requires 3 ingredients and comes together with minimal effort. Which, in my book, the simpler the better when it comes to entertaining guests!
I also love that I can keep this cream cheese sausage dip warm in a small slow cooker for hours, which keeps it warm, creamy, and at the perfect consistency for your guests.
But most importantly, Rotel Sausage dip is creamy, hearty, full of flavor, and incredibly delicious. Your guests are bound to love this dip!
Ingredients Needed

There are only 3 ingredients in this simple sausage dip. And while they are not necessarily healthy, they are much more wholesome than processed cheese dips--and much tastier!
- Sausage: Use ground bulk sausage. I personally like organic turkey or chicken sausage to cut back on fat, calories, and preservatives, but you can use any brand that your family likes. Just be sure you select one that is not a breakfast sausage or the flavor will be off in the final product. Italian sausage CAN be used, but it too will change the flavor up a bit.
- Rotel Tomatoes: Diced tomatoes with green chilies give this dip all of its flavor and spiciness! You can use mild, spicy, or original to control the heat level of this dip.
- Cream Cheese: Cream cheese gives this dip its creaminess. Use full fat or â…“rd less fat, but do not use fat-free cream cheese, as it will not melt into the sausage dip the same way.
How to Make Rotel Sausage Dip
You can prepare this dip on the stove or the slow cooker. Personally, I prefer the slow cooker method, as I can keep the dip warm in the crockpot for serving.
Stove Top Directions
- In a nonstick pan, brown the sausage breaking up into small pieces over medium-high heat.
- Once the sausage is browned, drain off any excess grease, and return the sausage to the pan.
- Add in cream cheese and Rotel tomatoes and cook until the cream cheese is melted and creamy.
- Transfer the dip to a serving dish and serve warm.

Slow Cooker Directions
- In a nonstick pan, brown the sausage breaking up into small pieces over medium-high heat.
- Once the sausage is browned, drain off any excess grease, and then the sausage to a slow cooker.
- Add the cubed cream cheese and Rotel tomatoes to the slow cooker and place the lid on the slow cooker.
- Turn the heat to low and let heat through, stirring every 15 minutes. It should only take 30-45 minutes for the cream cheese to melt into the dip.
- Once melted, turn the slow cooker to keep warm and serve. The dip will keep on warm for up to 3-4 hours.

Recipe Tips and Notes
- Serving: This sausage dip is best served warm, therefore I love to keep this dip warm in the crockpot. That way I can leave it out for a party without worrying about the dip getting cold and losing its creamy consistency.
- Speed it up: Speed up the process by using the stove-top method and then transferring the sausage dip to the slow cooker once prepared. Place on keep warm to serve.
- Cream Cheese: Remember to use softened, cubed cream cheese. It will melt much more evenly and not be at all chunky.
- Leftovers: You can store the leftover dip in the refrigerator for up to 3 days.

curious, some same 1 package 8 oz cream cheese, other recipes are 2. Have you made it both ways and prefer just the 1 package?

I wonder if they are using more sausage and rotel tomatoes than this recipe calls for? We have always made this with one package. I don't see how 2 packages would hurt, but may be less flavorful.

What is "bulk" sausage? We make our own breakfast and Italian sausage from ground pork, but I am unfamiliar with other sausage flavor types. If I had an idea of some of the spices, I could tailor a batch especially for this dip. So timely with all the celebrations right around the corner!!

Hi! The best way to describe bulk sausage is to use an example--Jimmy Dean Regular Sausage is what I would consider bulk sausage. Any sausage marked regular sausage is best for this recipe. You can certainly use Italian sausage, but not breakfast sausage that would be too sweet. The Italian sausage will give it a bit spicy, Italian flair--but still tasty.
