No party is complete without a good dip! While classic chip dip, creamy refried bean taco dip, and spinach artichoke dip are all great options, when I need something easy, this Rotel Cream Cheese Sausage Dip is my go-to party appetizer.

- No Processed Cheese. A lot of recipes for Rotel Sausage Dip call for processed American cheese or Velveeta cheese, this recipe uses cream cheese and the results are delicious!
- Party-Favorite. Served with tortilla chips, crackers, or cocktail bread, your guests are bound to devour this sausage dip. It is creamy, hearty, full of flavor, and incredibly delicious.
- Can Be Kept Warm For Hours. Rotel Sausage Dip can be held warm for hours in a small crock pot, keeping this sausage dip warm, creamy, and at the perfect consistency for your guests.
Notes on Ingredients
- Sausage: Use ground bulk sausage, not breakfast sausage. I like organic turkey or chicken sausage to cut back on fat, calories, and preservatives, but you can use any brand your family likes. Bulk Italian sausage CAN be used but will add notes of garlic, oregano, and red pepper flakes.
- Rotel Tomatoes: Diced tomatoes with green chilies give this dip all of its flavor and spiciness! You can use mild, spicy, or original to control the heat level of this dip.
- Cream Cheese: Cream cheese gives this dip its creaminess. Use full fat or â…“rd less fat, but do not use fat-free cream cheese, as it will not melt into the sausage dip the same way.
Tips for the Best Cream Cheese Sausage Dip
The following tips are provided to help you achieve perfect results. You will find the detailed instructions in the recipe card at the bottom of this post.
- Drain off the Grease. Be sure to drain off any excess fat after browning the sausage or the dip will separate in time.
- Cube the Cream Cheese. It is best to add your room-temperature cream cheese to the dip cubed. It will melt much more evenly into the dip.
- Serve Warm. While you can prepare this dip on the stove or in the crockpot, I recommend using a crockpot to keep the dip warm in the crockpot for serving, as this will keep the sausage dip at the perfect consistency and temperature for hours.
Serving Suggestions
This creamy Rotel Sausage Dip is great paired with tortilla chips, corn chips, Triscuit crackers, toasted cocktail bread, toasted baguette slices, and/or celery sticks. I have even served this sausage dip in mini phyllo cups for a bite-sized snack perfect for a cocktail party.
Storage and Reheating Instructions
- Refrigerate: Store cooled leftover sausage cream cheese dip in the refrigerator for up to 3 days. I don't recommend freezing it, as it will separate with thawed.
- Reheat: Reheat the dip on low in a crockpot or in a heat-safe bowl in 30-second intervals, stirring between each interval until warmed through.

Cream Cheese Sausage Dip with Rotel
Ingredients
- 1 pound bulk ground sausage turkey, chicken or pork
- 1 (10 ounce can) diced tomatoes with green chiles name brand Rotel
- 8 ounces cream cheese softened
Instructions
Stove Top Directions
- Brown the sausage on the stove over medium-high heat, breaking it up into small pieces as it browns. Once the sausage is browned, drain off any excess grease and return to the sausage skillet.
- Add in cream cheese and rotel tomatoes and cook over medium heat until the cream cheese is melted and creamy.
- Once combined, transfer the dip to a serving dish and serve warm.
Slow Cooker Instructions
- Brown the sausage on the stove over medium-high heat, breaking it up into small pieces as it browns. Once the sausage is browned, drain off any excess grease.
- Add the sausage to a small crockpot along with the cubed cream cheese and Rotel tomatoes.
- Place the lid on the slow cooker and cook on low heat to heat through, stirring every 15 minutes. It should only take 30-45 minutes for the cream cheese to melt into the dip.
- Once melted, turn the slow cooker to keep warm and serve. The dip will keep on warm for up to 3-4 hours.

I wonder if they are using more sausage and rotel tomatoes than this recipe calls for? We have always made this with one package. I don't see how 2 packages would hurt, but may be less flavorful.

What is "bulk" sausage? We make our own breakfast and Italian sausage from ground pork, but I am unfamiliar with other sausage flavor types. If I had an idea of some of the spices, I could tailor a batch especially for this dip. So timely with all the celebrations right around the corner!!

Hi! The best way to describe bulk sausage is to use an example--Jimmy Dean Regular Sausage is what I would consider bulk sausage. Any sausage marked regular sausage is best for this recipe. You can certainly use Italian sausage, but not breakfast sausage that would be too sweet. The Italian sausage will give it a bit spicy, Italian flair--but still tasty.
