Meal Plan 131

What if a little extra prep one night could make the next night's dinner almost effortless? That's exactly what this week's meal plan does! We're turning leftover chili into tamale pie, roasting extra sweet potatoes for another dinner, and making enough taco meat for two completely different meals. Plus, I've included a fun, easy Halloween dinner so you can feed everyone before trick-or-treating.

The goal? Less cooking, less food waste, and fewer nights starting dinner from scratch.

Tips for this Week's Meal Plan

  • Sunday: Make a full batch of chili and set aside 3-4 cups for Monday's Tamale Pie. Instead of making another filling from scratch, you'll simply top the leftover chili with cornbread batter and bake. Two dinners, one pot of chili!
  • Monday: Use the reserved chili to make Tamale Pie. You can use my homemade cornbread recipe or a boxed mix to keep things easy. Dinner is mostly assembled before you even start!
  • Tuesday: When making Sheet Pan Sausage and Veggies, roast an extra 2-3 sweet potatoes for Wednesday's dinner. Season the extra potatoes simply with olive oil and salt so they work well with the taco-seasoned beef. Refrigerate separately, and tomorrow you'll have one less thing to cook.
  • Wednesday: With the sweet potatoes already roasted, all you need to do is prepare the taco meat and toppings for the Ground Beef Sweet Potato Bowls. Double the taco meat and refrigerate half for Friday's tacos. Ground turkey works just as well as ground beef here and is a great option if you prefer it or find it on sale. Save any leftover cottage cheese for Thursday's lasagna.
  • Thursday: My Easiest Homemade Lasagna uses cottage cheese instead of ricotta, making it the perfect way to use what's left from Wednesday's bowls. Serve it with a fresh Greek salad.
  • Friday: Remember that extra taco meat you made Wednesday? Dinner is practically done! Reheat the filling until hot, warm some tortillas, and set out your favorite toppings. Use ground beef or turkey, depending on what you chose Wednesday. Dinner comes together in minutes, with almost no cleanup.
  • Saturday: Before heading out for trick-or-treating, make English Muffin Mummy Pizzas and Apple Monsters. It's a fun Halloween dinner that takes little time to prepare.

A Few Extra Ways to Save

  • Buy ground beef and ground turkey in larger packages and split them between this week's recipes. Use whichever is on sale.
  • Don't waste the toppings. Avocado, cilantro, lettuce, and cheese bought for Wednesday's bowls can double as Friday's tacos.
  • Make Thursday's lasagna even easier. Swap ground beef for sliced pepperoni, or skip the meat altogether. If you have any toppings left over from the Greek salad, use them in lunches for Greek quinoa salad or a Mediterranean chickpea salad.
