Tips for This Week's Meal Plan

  • On Sunday, prepare Corned Beef and Cabbage and use leftovers for Reuben sandwiches on St. Patrick's Day.
  • For Reubens: toast rye bread, and top with sliced corned beef, drained sauerkraut, Swiss cheese, and thousand island dressing. Grill as you would grilled cheese sandwiches.
  • This week calls for red potatoes and yukon gold potatoes. Feel free to use all Yukon gold potatoes.
  • Prepare extra rice with fajitas to serve with chicken stir fry Friday night.
  • Use boneless skinless chicken breasts to make chicken strips and chicken stir fry.
  • Use fresh broccoli for broccoli soup and chicken and broccoli stir-fry.
  • Feel free to skip the egg wash in the breading for chicken tenders and fish sticks. For the fish sticks, use mustard instead of eggs. For the chicken tenders use milk or yogurt.
