Tips for This Week's Meal Plan

  • If you happen to have leftover sweet potato chili, use that as the base for Tamale Casserole--simply add the cornbread topping as bake as directed.
  • Use sweet potatoes for the chili, burritos for lunch, and the Chicken Tex Mex Skillet. I also recommend baking a few to have for delicious breakfast sweet potatoes.
  • No Instant Pot? To prepare the Sweet and Sour Chicken, prepare the sweet and sour sauce, mixing the cornstarch right into the sauce. Sear the chicken in a large skillet. Once the chicken is golden and browned, add in the peppers, onions, pineapple and sauce. Bring to a bubble, reduce the heat, and simmer until chicken is cooked through and sauce has thickened. No need to add additional chicken stock.
  • You only need ยฝ cup of beef broth for the Tater Tot casserole. Feel free to replace that with chicken stock or vegetable broth, as both are used throughout the week.
  • Feel free to omit the egg from the Mexican Lasagna--it won't set up as well, but it will still taste delicious.
