Tips for This Week's Meal Plan
- Personally, I would double the salad on Sunday to enjoy on Monday night and Wednesday night. Keep the components separate and for best results assemble salad right before serving.
- If you make lasagna with cottage cheese, use leftover cottage cheese to make Instant Pot egg bites.
- Use half a pack of smoked sausage for the jambalaya and half for the sausage and potatoes to save money if desired.
- For Chicken Piccata, serve with angel hair pasta. Bring a large pot of water to rapid boil. Once boiling, add 1 tablespoon kosher salt and drop the pasta into the water. Cook according to package instructions. Drain, reserving ยผ cup of the cooking liquid. Toss cooked pasta with olive oil and 1 tablespoon cooking liquid, adding more as needed. Serve with chicken.
- If you don't have an Instant Pot to make sausage and potatoes, layer the ingredients for the smoked sausage and potatoes in a large slow cooker and cook on high for 2-3 hours or on low for 4-6 hours.
- Keep Saturday night simple, with a quick and easy French Bread Pizza. If you don't have an air fryer, bake the pizzas in a 425 degree F oven until toasted and cheese melted (about 12-15 minutes).
- Be sure review meal plan for time-saving tips and key grocery items. Keep in mind I only create the grocery lists based on dinner and assuming your spice cabinet is stocked with common spices.
