Dinner Recipes
- Sunday: Instant Pot Pulled Pork (or Crockpot Pulled Pork) with Coleslaw and Classic Potato Salad or Instant Pot Potato Salad
- Monday: Burgers with Baked Beans, Summer Pasta Salad, and Mini Cheesecakes
- Tuesday: Instant Pot Carnitas OR Crockpot Carnitas with Slaw and Summer Fruit Salad
- Wednesday: BBQ Pork Pizza with Leftover Fruit Salad
- Thursday: Southwest Chicken Salad (with Leftover Carnita Meat)
- Friday: Black Bean Tacos with Leftover Slaw
- Saturday: Sloppy Joes with Baked Fries

Snacks & Treats
Tips for This Week's Meal Plan
- For Pulled Pork/Carnitas: Purchase a large 5-6 pound roast (pork loin or shoulder, or butt) and use half for the pork and half for carnitas.
- Use Chicken in Place of Pork:
- For BBQ Chicken: Using my recipe for Instant Pot BBQ Chicken, double the recipe and follow the instructions as written OR cook on low in the crockpot high for 3-4 hours or on low for 4-6 hours.
- For Chicken "Carnitas": Instead of using pork loin, use boneless skinless chicken breasts or thighs and the same seasoning/liquid. For the Instant Pot, cook on high pressure for 8 minutes (11 minutes if chicken frozen) with a full natural pressure release. Or cook on low in the crockpot high for 3-4 hours or on low for 4-6 hours.
- For Leftover BBQ Pork: Use for BBQ Pizza and to add to quesadillas, etc.
- For Leftover Carnitas: Use in place of the chicken in a Southwest Salad and for burrito bowls for lunches.
- For Southwest Salad: Use leftover carnitas. If you want to top with tortilla chips, serve some with the carnitas as well if desired.
- For Cabbage: Purchase one head of cabbage and use half to make coleslaw for pulled pork and the remainder for the carnitas.
- Friday Night: Keep it simple with easy black bean tacos and leftover cabbage.
- For Potatoes: Use russet potatoes for potato salad and oven fries. Or swap the potato salad for additional oven fries.
- Buns: Use hamburger buns for sloppy joes and burgers.
- Onions: Use sweet onions for baked beans, pasta salad, potato salad, and sloppy joes rather than purchasing a red onion, yellow onion, and sweet onion.
- Note on Grocery List: This week's list does not include Memorial day dessert.
