Tips for this Week's Meal Plan

  • This week calls for a lot of kale. Feel free to use baby spinach in place of the kale. I use it for a large salad, in the enchiladas, and in the vegetable soup.
  • Use red or gold potatoes for the curry, soup, sheet pan dinner, and beef stew.
  • Use any leftover carrot, squash, or broccoli for sausage sheet pan meal.
  • Prepare a double batch of rice Monday night to serve with the curry and teriyaki chicken.
  • No Instant Pot? Follow these directions:
    • Beef Stew: Season beef and sear in a large Dutch oven. Add in wine, stock, tomato sauce, horseradish, thyme, bay leaf, Worcestershire sauce, and salt and pepper. Bring to a boil and reduce heat. Let simmer, covered for 1 ยฝ to 2 hours. Add in potatoes and carrots and simmer for an additional 30 minutes. Whisk together cornstarch and water whisk into the stew and let the stew thicken.
    • Rice: Cook on the stove as the package directs.
    • Vegetable Soup: Cook on low heat for 7-8 hours in a crockpot, or for on high 3-4 hours.
