My Papa was the king of simple, yet flavorful meals. From his pot roast to his homemade chicken pot pie to his beef stew, his recipes always delivered comfort food with ease.
And when it came to leftover ham, he turned to one of two recipes. Ham and bean soup OR ham and potatoes with green beans. Both are delicious, but this Ham and Potato recipe is the easiest of all his leftover ham recipes! And after a big holiday feast made with Baked Glazed Ham, Scalloped Potatoes, and Strawberry Spinach Salad, easy is what we all need!

Notes on Ingredients & Substitutions
- Ham Bone/Ham Hock: A leftover ham bone from your holiday ham will add incredibly smokey flavor the green beans and potatoes. As you can see from my photos, I used a ham bone with a lot of meat left on the bone. It is okay if your ham bone is not as meaty, it will still greatly flavor the dish.
- Potatoes: Waxy new or gold potatoes are best for this ham and potato soup. However, feel free to use peeled russet potatoes or red potatoes if that is what you have on hand. There is no need to peel new, gold, or red potatoes unless desired, but I would recommend peeling russet potatoes.
- Green Beans: Fresh, frozen, and canned green beans can be used for this recipe. Use two 15-ounce or one 28-ounce can of cut green beans, drained, OR 1 pound fresh green beans, ends trimmed and cut into 1½-inch pieces, OR 4 cups of frozen diced green beans.
- Seasonings: This soup is seasoned simply with onion powder, minced garlic, pepper, and seasoned salt.
- Stock: I recommend using low-sodium store-bought or homemade chicken stock or Instant Pot chicken stock to control the level of sodium in the soup.
Recipe Modifications
- Make it Brothier. Increase the broth to 4 cups or use 4 cups stock + 2 cups water for a soup-like consistency.
- Add an Onion. If desired, sauté one minced yellow onion in a bit of butter or olive oil for additional flavor.
- Leftover Ham/Ham Steak: If you don't have a ham bone, or you can opt to add 2-3 cups of cubed leftover ham, from baked ham or Instant Pot ham, or even a ham steak. You will want to decrease the cooking time though, so that the ham does not dry out.
How to make Crockpot Ham and Green Beans with Potatoes
The following tips are provided to help you achieve perfect results. You will find the detailed instructions in the recipe card at the bottom of this post.
Layer Ingredients. In the base of a slow cooker, combine the potatoes, green beans, broth and seasonings. Nestle the ham bone into the ingredients.
Slow Cook. Set to cook on low for 6-8 hours or on low for 3-4 hours.
Using leftover ham? If using leftover ham verses a ham bone, I would suggest cutting your potatoes into bite-sized cubes and reducing the cooking to 4 hours on low or 2 hours on high so the ham doesn't dry out.
Dice Ham. Remove the ham bone and shred or cut off any meaty portions of ham.
Combine and Serve. Stir the diced ham back into the crockpot. Serve with crusty bread and a side salad for a hearty meal or as a side dish for any entree!
Instant Pot Instructions
You can speed up the process of this recipe by using an electric pressure cooker. Just like the crockpot method, using a diced ham verses a ham bone or ham hock will slightly change the directions.
- Using A Ham Bone Combine potatoes, green beans, stock, and seasonings in the inner pot. Nestle the ham bone inside the ingredients. Pressure cook for 10 minutes on high pressure and allow for pressure to release naturally for at least 10 minutes.
- Using Diced Ham: Using my recipe for Instant Pot Sausage and Potatoes as a guideline, dice the potatoes into 1-½ inch chunks, to allow for a quicker cooking time. Combine everything in the inner pot and pressure cook on high pressure for 2 minutes. Allow for pressure to release naturally for at least 10 minutes after the cooking time has elapsed.
Storage Instructions
- Refrigerate: Allow the ham and potatoes to cool and then transfer to an airtight container. Store it in the refrigerator for 3-4 days.
- Freeze: Allow the dish to cool fully. Transfer it to a freezer-safe container leaving 1-inch space of space for expansion. Store in the freezer for up to 3 months.
- Reheat: Defrost if needed overnight in the refrigerator and reheat in 60-second intervals in a heat-safe bowl in the microwave to warm individual servings.

Potatoes and Green Beans with Ham
Ingredients
- 2-4 cups low-sodium chicken stock see recipe notes
- 1½ teaspoons seasoned salt or 1 teaspoon kosher salt
- 2 teaspoons onion powder
- ½ teaspoon black pepper
- 2 teaspoons minced garlic
- 4 cups Yukon gold or new potatoes cut into 2-3 inch chunks
- 4 cups canned, frozen, or fresh green beans see note
- 1 meaty ham bone see note if using leftover ham
Instructions
- Combine 2 cups of chicken stock, 1½ teaspoon seasoned salt, 2 teaspoons onion powder, ½ teaspoon black pepper, 2 teaspoons minced garlic, 4 cups potatoes, and 4 cups green beans inside the base of a slow cooker. Nestle the ham bone inside the ingredients.
- Place the lid on the slow cooker. Set to cook on low for 6-8 hours or on low for 3-4 hours.
- After slow cooking, remove the ham bone from the slow cooker and dice the ham off the bone.
- Stir the ham back into the slow cooker. Serve as desired.
