This dump-and-cook recipe for Ham, Green Beans and Potatoes is simple, flavorful, and perfect for busy nights or holiday leftovers!

Just like my recipe for Ham and Bean Soup and Instant Pot Split Pea Soup, this leftover ham recipe comes together with simple, affordable ingredients to create a budget-friendly meal that doesn't sacrifice on flavor.

The Easiest Leftover Ham Recipe

My Papa had a gift for creating simple, yet incredibly flavorful meals. From his tender pot roast to his rich chicken pot pie to his hearty beef stew, his recipes were always about comfort made easy. But one of his easiest--and most loved dishes was Green Beans and Potatoes with Ham.

The magic of this recipe happens right in the crockpot. Smoky ham, tender potatoes, and simple seasonings come together to create a rich, flavorful broth with zero fuss. It's one of those recipes that proves simplicity can still be absolutely delicious.

Notes on Ingredients

  • Ham Bone/Ham Hock: If you don't have a leftover ham bone, a ham hock is a great substitute and easy to find year-round.
  • Potatoes: Waxy potatoes are best as they will hold their shape and absorb the delicious broth--think new potatoes, red potatoes, or gold potatoes.
  • Green Beans: Fresh, frozen, or canned green beans all work.
  • Seasonings: This soup is seasoned simply with onion powder, minced garlic, pepper, and seasoned salt.
  • Stock: I recommend using low-sodium store-bought or homemade chicken stock or Instant Pot chicken stock to control the level of sodium in the soup.

How to Make Green Beans and Potatoes with Ham

The following tips are provided to help you achieve perfect results. You will find the ingredient quantities and detailed instructions in the recipe card at the bottom of this post.

  1. Layer Ingredients. In the base of a slow cooker, combine the potatoes, green beans, broth and seasonings. Nestle the ham bone into the ingredients.

  1. Slow Cook. Set to cook on low for 6-8 hours or on low for 3-4 hours.
  2. Dice Ham. Remove the ham bone and shred or cut off any meaty portions of ham.
  3. Combine and Serve. Stir the diced ham back into the crockpot. Serve with crusty bread and a side salad for a hearty meal or as a side dish for any entree!

Recipe Modifications

  • Make it Brothier. Increase the broth to 4 cups or use 4 cups stock + 2 cups water for a soup-like consistency.
  • Use Russet Potatoes: While waxy potatoes are best, if you only have russet potatoes on hand, use them--just peel for best results.
  • Leftover Ham: If using leftover ham (such as diced Instant Pot Ham or Baked Ham) verses a ham bone, I would suggest cutting your potatoes into bite-sized cubes and reducing the cooking to 4 hours on low or 2 hours on high so the ham doesn't dry out. Add anywhere from 2-3 cups of cubed ham.
  • Instant Pot Instructions: Combine potatoes, green beans, stock, and seasonings in the inner pot. Nestle the ham bone inside the ingredients. Pressure cook for 10 minutes on high pressure and allow for pressure to release naturally for at least 10 minutes. 

Storage Instructions

  • Refrigerate: Transfer the cooled leftovers to an airtight container and store it in the refrigerator for 3-4 days.
  • Freeze: Allow the dish to cool fully. Transfer it to a freezer-safe container leaving 1-inch space of space for expansion. Store in the freezer for up to 3 months.
  • Reheat: Defrost overnight in the refrigerator if needed. Reheat individual servings in a heat-safe bowl in 60-second intervals in the microwave.

Potatoes and Green Beans with Ham

Add serious flavor to potatoes and green beans with the addition of a ham bone. Cooked low and slow in the crockpot, this dish delivers a soul-satisfying ham and potato recipe suitable to serve as a side dish or entree.

Ingredients 

  • 2-4 cups low-sodium chicken stock, see recipe notes
  • teaspoons seasoned salt, or 1 teaspoon kosher salt
  • 2 teaspoons onion powder
  • ½ teaspoon black pepper
  • 2 teaspoons minced garlic
  • 4 cups Yukon gold, red, or new potatoes, cut into 2-3 inch chunks
  • 4 cups canned, frozen, or fresh green beans , see note
  • 1 meaty ham bone, see note if using leftover ham

Instructions 

  • Combine 2 cups of chicken stock, 1½ teaspoon seasoned salt, 2 teaspoons onion powder, ½ teaspoon black pepper, 2 teaspoons minced garlic, 4 cups potatoes, and 4 cups green beans inside the base of a slow cooker. Nestle the ham bone inside the ingredients.

  • Place the lid on the slow cooker. Set to cook on low for 6-8 hours or on low for 3-4 hours.
  • After slow cooking, remove the ham bone from the slow cooker and dice the ham off the bone.

  • Stir the ham back into the slow cooker. Serve as desired.

Notes

Green Beans: Use two 15-ounce or one 28-ounce can of cut green beans (drained), 1 pound of defrosted frozen cut green beans, OR 1 pound fresh green beans, ends trimmed and cut into 1½-inch pieces. 
Using leftover ham? Add anywhere from 2-3 cups of cubed ham, dice potatoes into bite-sized cubes, and reduce the cooking to 4 hours on low or 2 hours on high so the ham doesn't dry out.
Potatoes: Waxy gold potatoes are best. However, feel free to use peeled russet potatoes if that is what you have on hand. There is no need to peel gold potatoes unless desired. 
Storage: Allow the dish to cool and then transfer to an airtight container and store in the refrigerator for 3-4 days. Alternatively, freeze for up to 3 months. Defrost if needed overnight in the refrigerator and reheat in 60-second intervals in a heat-safe bowl in the microwave to warm individual servings. 
Instant Pot Instructions: 
  • Using A Ham Bone Combine potatoes, green beans, stock, and seasonings in the inner pot. Nestle the ham bone inside the ingredients. Pressure cook for 10 minutes on high pressure and allow for pressure to release naturally for at least 10 minutes. 
  • Using Diced Ham: Dice the potatoes into 1-½ inch chunks, to allow for a quicker cooking time. Combine everything in the inner pot and pressure cook on high pressure for 2 minutes. Allow for pressure to release naturally for at least 10 minutes after the cooking time has elapsed.

    I used a ham bone from our smoked Easter ham, and it was way too salty. In the future, I will probably use water instead of broth.

    1. Hi Jill. I am sorry you found this salty. It likely was due to the fact that your ham was a bit saltier, your canned green beans were high in salt, OR your stock wasn't low-sodium. Water will work, but if your ham isn't well seasoned, it can be a bit bland.
