Paleo Pecan Bites: A bite sized portion of a no-bake, paleo, gluten-free Pecan Pie. This may not be the classic you grew up loving, but it will soon become a new favorite healthy treat!
So was it love at first bite? YES! But about a bite of the extremely sweet pie was all I could handle. That is one sweet pie!!
So many of my southern friends are OBSESSED with Pecan Pie. Sadly, many of them live for the one slice they let themselves have each year when their great aunt brings it to the Holiday party.Once a year for something you love is simply NOT enough. Not if you love it so much! If you told me I was only to have chocolate once a year, I would cry.
And you don’t have to tell me about the calories and fat in the pie–I know! I have heard it many, many times!
I personally think that when you choose to have the real deal Pecan Pie–you should go all in and enjoy without a bit of guilt. But since that is NOT healthy for everyday living, I have created an everyday snack that tastes very similar to the beloved Pecan Pie, but is actually good for you–like REALLY, REALLY good for you.
It is paleo, gluten free, no bake, and tastes heavenly! It also can be made in 5 minutes with no baking required! SCORE!!
What is not to love about a healthy, sweet bite, especially when it tastes like pie?
Exactly. Nothing. Nothing not to love. So go ahead make a dozen for this week a dozen for next or several dozen to take to your Gluten Free cousin at Thanksgiving (be warned–she may kiss you!)
- 1½ cups pitted dates
- ¼ cup almonds
- ¾ cup pecans
- ¼ teaspoon vanilla extract, optional
- dash of salt
- *If your dates are not soft, soak in hot water for 10-20 minutes to soften. Reserve liquid to use as a sweetener, if so desired.
- Process dates, almonds, pecans, salt and vanilla until paste forms.
- Scoop into ½ inch balls and refrigerate until serving.
