Tips for This Week's Meal Plan

  • Prepare a large salad Sunday and serve with pasta on Monday as well.
  • Plan for enough chicken tacos/salsa chicken for burrito bowls later in the week.
  • Prepare extra rice on Wednesday to make burrito bowls Thursday.
  • Use leftover salsa chicken (crockpot or Instant Pot) and leftover rice to make quick burrito bowls on Thursday. Any remaining leftovers are great for lunch (add to salads, quesadillas, make tacos/burritos, etc.)
  • Feel free to swap out the asparagus for any other veggie you like in the Chicken Asparagus Stir-Fry.
  • Use red potatoes for roasted and mashed potatoes.
