Tips for this Week's Meal Plan

  • Use baby red potatoes for the pot roast dinner on Sunday and a side on Tuesday night.
  • For Monday's Butternut Squash Chili, purchase a large butternut squash. Use 3 cups of cubed for the chili and any remaining squash roast for the side salad.
  • Purchase a large pack of chicken breast or thighs and use them for blackened chicken and a Cowboy chicken.
  • If needed, double the Cowboy Chicken and rice and enjoy leftovers by chopping the leftover baked chicken into bite-sized pieces and serve with rice in tortillas. Simple and tasty! I find one recipe is enough to have a small amount of leftovers for burritos.
  • On Friday, have a little festive fun with dinner and make it Halloween Themed. Let the kids get involved. (Or enjoy homemade cheese pizza instead.)

  1. Hi Kristen I love these menus. Especially all the Instant pot ones. I tried to print this weeks menu and shopping list and the only thing that shows up to print is the first page with the menu. No list Any idea why? Thanks for all you do.

    1. Hi Debbie! I am thrilled to be able to provide meal plans and so grateful to hear they are truly helpful for you. I have uploaded a new version here that appears to be working--no idea what the issue was earlier but thank you for bringing it to my attention.
