These Slow Cooker BBQ Chicken Drumsticks are an easy crockpot dinner recipe that your family will ask for on repeat. Chicken legs are coated in a smoky dry rub, slow cooked until tender, then brushed with sweet and tangy BBQ sauce and broiled for that sticky, caramelized finish everyone fights over.

  • Use a thermometer instead of guessing. Chicken drumsticks are done at 165°F, but cooking slightly beyond that (175°F-190°F) helps the meat become extra tender.

  • Dry Rub: The combination of brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper creates a balanced sweet-smoky flavor. The brown sugar also helps the chicken caramelize beautifully under the broiler. Feel free to swap it out and use seasoned salt to keep things simple
  • BBQ Sauce: Use your favorite store-bought sauce or homemade BBQ sauce. A thicker sauce works best because it clings to the drumsticks instead of sliding right off during broiling. For allergy-friendly meals, double-check labels for gluten or corn syrup ingredients if needed.

How to Make Crockpot BBQ Chicken Drumsticks

Season, slow cook, and finish to crisp the skin. Then grab some napkins and dig in!

Step One: Season Chicken

Mix together the brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.

Pat the chicken dry with a paper towel then sprinkle the seasoning mixture evenly over the drumsticks. Use your hands to rub it into the chicken so every piece is coated well.

Step Two: Slow Cook Chicken Drumsticks

Place the seasoned drumsticks into the base of a greased slow cooker.

Cook on LOW for 4-5 hours or HIGH for 2-3 hours, until the chicken reaches at least 165°F internally, but ideally aim for 175-190°F.

Step Three: Brush with BBQ Sauce and Broil

Transfer the cooked drumsticks to a foil-lined baking sheet (the foil makes clean-up a breeze).

Brush generously with BBQ sauce then pop under the boiler for 2-3 minutes per side, until the sauce becomes bubbly and lightly caramelized. Watch closely. You want the skin to become crispy, not burnt.

How long does it take to cook chicken legs in a crockpot?

Slow cookers, just like ovens, can vary in temperature. A traditional crockpot with a ceramic base takes about 2 hours on high or 4 hours on low to cook chicken legs. All-Clad models typically cook a bit faster, so I would recommend checking the internal temperature 30 minutes prior to the suggested cooking time.

How do you know when chicken legs are fully cooked?

The best way to ensure your chicken is fully cooked, but not overcooked is to use a digital thermometer. Once the center of a chicken leg reaches 165℉ are safe to eat, but they are at their most tender if taken to 175-190℉.

Can you make this recipe with skinless chicken legs?

Yes, but the skin helps to lock in the moisture and adds flavor. I would recommend slow cooking with the SKIN ON and then remove before serving.

Ingredients 

For the Rub

  • 1 tablespoon brown sugar, optional
  • 2 teaspoons smoked paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper

Instructions 

  • In a small bowl, prepare the rub by combining 1 tablespoon brown sugar, 2 teaspoons smoked paprika, 1 teaspoon kosher salt, 1 teaspoon onion powder, 1 teaspoon garlic powder, and ½ teaspoon black pepper together.
  • Pat the chicken drumsticks dry with a paper towel then liberally rub the spice rub over the chicken, coating to cover.

  • Grease the slow cooker insert with cooking spray. Place the chicken legs into the slow cooker. Cover and cook on high for 2 hours or on low for 4-5 hours.

  • Once the chicken legs have reached an internal temperature of 175-190℉, remove them from the slow cooker and place them onto a sheet pan or broiler pan. Brush the chicken legs with barbecue sauce and broil until crispy, about 2-3 minutes per side.

Chicken Skin: For juicy, flavorful chicken drumsticks, cook with the skin on and discard after cooking if you don't want to eat the skin. Alternatively, you can peel off the skin before rubbing with the spice blend. The chicken will be delicious, but not as juicy. 
Brown Sugar: This is completely optional, but adds a nice balance to the rub. 
All-Clad Slow Cookers: These models can cook a bit faster, so begin checking the temperature of the chicken 30 minutes prior to what the recipe states. 
Determining Cook Time: The best way to ensure your chicken is fully cooked, but not overcooked is to use a digital thermometer. Once the center of a chicken leg reaches between 165°F the drumsticks are safe to eat, but taking them to closer to 175-190°F ensures they are super tender.
