Tips for this Week's Meal Plan

  • On Sunday, prepare a roasted chicken and roasted fall veggies. Intentionally prepare extra fall veggies OR make a tray of roasted butternut squash to save for a salad Monday night.
  • Save leftover chicken for the enchilada bake. Still have leftovers? Make chicken salad for lunch.
  • For the fall salad Monday, while the recipe calls for roasted butternut squash, you can add any roasted fall veggies--sweet potatoes, carrots, and even brussels sprouts.
  • Bonus: Save the bones from your chicken and make homemade chicken stock (stovetop or Instant Pot) use it to make chicken chili.
  • Instead of purchasing chicken stock, remove the chicken meat from the chicken and use them to make homemade chicken stock (or Instant Pot stock.) Use for chicken chili and swap the beef stock for chicken stock in stuffed pepper casserole if desired (or freeze for later).
  • On Friday prepare extra rice (any variety works) and serve leftover chicken chili over rice with toppings of choice.
  • For stuffed pepper casserole, feel free to only use cheddar instead of purchasing mozzarella as well (or use mozzarella to make pita pizzas for lunches.)
  • For Cilantro Lime Rice, add 1 tablespoon of water to 2-3 cups of leftover rice and place in heat-safe dish, cover with damp paper towel and microwave in 1-minute intervals until warmed through. Fold in zest and juice of 1 lime, a pinch of salt, and ยผ cup minced cilantro.
