This week's meal plan is one of my favorites! It features a ton of Tex-Mex recipes that are true favorites! Whether celebrating Cinco de Mayo or just looking for flavorful meal, you are going to love this week's planned meals.

∗ How to Use Meal Plans∗
Each meal plan includes a printable guide complete with a shopping list and tips to cut back on prep and minimize food waste. I also base each meal plan based on seasonal produce.
Keep in mind the following tips when using these meal plans.
- Print the meal plan to hang on your fridge and print each recipe to make your grocery list and prepare dinner! You can hit the name of each recipe on the meal plan and it will take you directly to that recipe!
- Right-click each link and hit open in a new tab so you have all the recipes open at once. Hit the jump to recipe and print off recipes. There is a check box to check off ingredients you already have. This will make shopping a bit easier.
- Be sure review meal plan for time-saving tips and key grocery lists. Keep in mind I only create the grocery lists based on dinner and assuming your spice cabinet is stocked with common spices.
Week Three's Dinner Recipes
- Sunday: Instant Pot Beef Barbacoa with Instant Pot Cilantro Lime Rice or Instant Pot Spanish Rice
- Monday: Crockpot Salsa Chicken or Instant Pot Salsa Chicken with Leftover Rice
- Tuesday: Enchilada Casserole (with leftover Beef Barbacoa) with Pina Colada Smoothie
- Wednesday: Taco Salad using Leftover Salsa Chicken or Barbacoa with Pina Colada Smoothie
- Thursday: Tex-Mex Chicken Skillet
- Friday: Sweet Potato Tacos with Chips and Guacamole
- Saturday: Mexican Lasagna

Meal Plan Tips
These tips are designed to help you cut down on food prep and food waste, by using up leftovers.
- This week is all about Southwestern/Tex-Mex/Mexican style meals--I could LIVE on recipes like this. The ingredients are very similar and feel free to mix and match things as you see fit and use leftovers to make burritos bowls for lunch.
- On Sunday, serve Barbacoa over rice of your choice and reserve 3 cups of the meat to use to make enchiladas later in the week.
- No Instant Pot? Cook the barbacoa beef for 10-12 hours on low in a slow cooker.
- To prepare the enchiladas, use leftover shredded Barbacoa in place of chicken to save time. You can opt to omit the cream cheese, but it makes the enchiladas super creamy.
- Use leftover salsa chicken for the Taco Salad. No need to brown up taco meat.
- Use leftover sweet potatoes and black beans for breakfast hash and sweet potato burritos for lunch.
