Tips for this Week's Meal Plan

  • On Sunday, prepare extra rice and set aside extra for Tuesday's dinner.
  • On Sunday, shred a small amount of the cabbage to use top top chicken and the remainder for the Bratwurst Sheet Pan meal.
  • For Cilantro Lime Rice, add 1 tablespoon of water to 2-3 cups of leftover rice and place in heat-safe dish, cover with damp paper towel and microwave in 1-minute intervals until warmed through. Fold in zest and juice of 1 lime, a pinch of salt, and ยผ cup minced cilantro.
  • Make burritos using leftover chicken and sweet potatoes, leftover rice, leftover black bean chili, and/or leftover cowboy chicken. You may have enough for Friday's dinner and a few lunches.
  • Purchase a large bag of sweet potatoes. Bake some using the Instant Pot or oven and use to make breakfast sweet potatoes and sweet potato pancakes.
  • Use any leftover toppings from Tex Mex meals, burritos, to top Mexican lasagna.
