With a veggie-packed pasta, our favorite fish tacos and two insanely delicious pork tenderloin dinners, you are going to eat well this week!

Tips for This Week's Meal Plan
- Use any leftover pot roast to make pot roast sandwiches for lunch.
- On Monday night, feel free to add a salad as a side, but with so many veggies--the pasta truly doesn't need to be paired with anything. You can also swap out veggies to use what you have on hand.
- Use cabbage for both the fish tacos and pork skillet.
- For the fish tacos, plan to use mahi mahi--as you will be making blackened mahi mahi later in the week.
- On Wednesday night, double the grits and double the spice rub to use later in the week. You also want to pop one of the pork tenderloins in the balsamic marinade on Wednesday for dinner Thursday.
- Use leftover veggies and tortillas to make quick work of lunch options this week.
