Tips for this Week's Meal Plan

  • For Sunday, prep the Dutch oven bread Saturday night, or simply purchase a loaf of your favorite crusty bread.
  • I recommend using a dry white wine to add flavor to the Ratatouille and Chicken Cordon Bleu. This is a great time to use an inexpensive bottle of wine (think Two Buck Chuck from Trader Joes.) Alternatively, use additional chicken or veggie stock.
  • For the ratatouille, if not vegetarian, use chicken stock as you will need it later in the week for Chicken cordon bleu.
  • The sloppy joes make enough for 8 sandwiches. Double if needed to have enough leftover to serve later in the week.
  • Feel free to swap out the ground beef for ground turkey or chicken for the sloppy joes and Mexican spaghetti.
  • Top the Mexican spaghetti with sliced avocado and use any leftovers to make a quick avocado salad for dinner Wednesday night. Leftover spinach? Use it to make
  • Make extra baked potatoes to make loaded potato skins on Saturday night for game day. You may also want to include them on dinner Wednesday night if your family needs the carbs.
  • Purchase a pack of thinly sliced ham and Swiss cheese and use it to make Chicken Cordon Bleu AND ham stromboli for a fun twist on pizza night.
  • Speaking of pizza night, make or purchase extra pizza dough to make pull apart pizza bread for Saturday. So good!
  • For the fruit salad on Friday night, use any fruit you like and feel free to omit the honey lime dressing if desired.
