Lunch Ideas

  • Leftovers from Labor Day
  • Fried Rice--using any leftover rice and veggies from week
  • Egg Salad--make extra hard boiled eggs when making potato salad

Tips for this Week's Meal Plan

  • Prepare chicken legs in the air fryer or slow cooker on Sunday.
  • On Sunday, also prepare a large batch of potato salad to serve on both Sunday and Monday and make a few extra hard-boiled eggs to make egg salad for easy lunches.
  • Prepare extra taco meat, refried beans, and salsa on Tuesday to make a taco pizza later in the week. Feel free to take a shortcut and purchase canned refried beans.
  • Use toppings from Tuesday night's tacos to top the taco pizza.
  • Make extra rice and serve with both the chicken and broccoli and chicken and bok choy.
  • Feel free to use any veggies you like for each of the stir-fries.
