Tips for this Week's Meal Plan

  • Prepare extra Mac and Cheese on Monday night and serve with BBQ Chicken on Tuesday.
  • For side salads, use romaine, as that is what you will use for the Caribbean Salad and then add any toppings from extra produce from the week (peppers, tomatoes, etc.)
  • Prepare extra rice on Wednesday to serve with the Mahi Mahi on Friday.
  • No Instant Pot? Prepare 2 cups of rice as box directs on stove. Add zest and juice of 1 large lime along with ยผ-1/2 cup chopped cilantro and salt as desired.
  • If desired, serve fajitas with tortilla chips and reserve some to top Caribbean Salad.

  1. Hi Kristen. Thank you so much for all the delicious recipes. I too feel so sad over all the loss in Texas. My prayers and heartfelt thoughts go out to them.
