- Sunday: Rotisserie Chicken with Roasted Potatoes and Carrots
- Monday: Pasta Puttanesca with Caesar Salad
- Tuesday: Buffalo Chicken Tacos with Carrots & Celery with Ranch

- Thursday: Instant Pot Minestrone OR Crockpot Minestrone with Caesar Salad

Meal Plan Tips
These tips are designed to help you cut down on food prep and food waste, by using up leftovers.
- On Sunday, make 2 (or 3) Rotisserie Chickens. Enjoy one tonight and save the other to make the chicken pot pie and buffalo chicken tacos.
- Along with preparing extra chicken, also prepare extra potatoes and carrots. Use those in place of the boiled carrots and potatoes to make whipping up homemade pot pie that much easier on a weeknight.
- I use the bones of the chicken along with veggie scraps from carrots and onions to make homemade chicken stock or Instant Pot chicken stock to use the recipes for the week. It is a huge money saver and super simple to do.
- Make a large Caesar Salad AND/OR Greek Salad and serve with dinner. I like both to be included with meals this week.
- Use the leftover olives and feta from the puttanesca to make the Greek salad and/or Greek quinoa salad for lunch. Use the leftover anchovies (if using) to make the Caesar dressing.
- Use spinach for salads, for the spinach pizza, and in minestrone.
- Use leftover celery, carrots, etc. for snacking with hummus or homemade ranch throughout the week.
∗ How to Use Meal Plans∗
Each meal plan includes a printable guide complete with a shopping list and tips to cut back on prep and minimize food waste. I also base each meal plan based on seasonal produce.
Keep in mind the following tips when using these meal plans.
- Print the meal plan to hang on your fridge and print each recipe to make your grocery list and prepare dinner! You can hit the name of each recipe on the meal plan and it will take you directly to that recipe!
- Right-click each link and hit open in a new tab so you have all the recipes open at once. Hit the jump to recipe and print off recipes. There is a check box to check off ingredients you already have. This will make shopping a bit easier.
- Be sure review meal plan for time-saving tips and key grocery lists. Keep in mind I only create the grocery lists based on dinner and assuming your spice cabinet is stocked with common spices.
