    Skip the Mexican restaurant and let your slow cooker make steak fajitas for you! These Crock Pot Steak Fajitas come together with a few simple steps and are served up with all the flavor of a restaurant dish!

    Make Steak Fajitas right in the slow cooker! This recipe has all the delicious flavors of traditional fajitas minus the hassle. Dump everything into the crockpot and let it cook until tender and perfectly seasoned. 

    Crockpot Steak Fajitas come together with just a few simple ingredients and are served up with all the flavor of a restaurant dish. Pair them with Instant Pot Refried Beans and a side of Homemade Guacamole, for a delicious restaurant-quality dinner.

    Slow Cooker Steak Fajitas are the perfect lazy and cheap way to enjoy Steak Fajitas any night of the week.

    This slow cooker steak recipe uses pantry staples, an inexpensive cut of meat, and takes just minutes to prepare.

    Notes on Ingredients

    • Steak: Because this is a recipe for crockpot steak fajitas, a less expensive cut of meat works great. Choose a cut of beef like flank steak, round steak, or sirloin steak.
    • Onions and Peppers: Use any variety of bell peppers and onions you like. This is also a great time to take a shortcut and use a bag of frozen peppers and onions.
    • Homemade Fajita Seasoning: Which is a simple blend of pantry staples, including chili powder, cumin, smoked paprika, salt, onion powder, and garlic powder.
    • Tomatoes with Diced Green Chiles: Be sure to use MILD if you don't want your crockpot fajitas to be too spicy.
    • Fresh Lime Juice and Zest: Don't overlook this! Adding the zest and juice of a fresh lime will wake up the flavors.

    Step-By-Step Instructions

    • Using a sharp knife, thinly slice your chosen cut of steak, against the grain, into ½ inch strips. Pro-tip: Place your steak into the freezer for 10-20 minutes--this makes it MUCH easier to slice.
    • Cut fresh peppers and onions into ½ inch strips.
    • Place the steak, peppers, and onions into the slow cooker.

    • Add in the fajita seasoning and toss to coat. 
    • Pour tomatoes over top and spread to cover the meat.
    • Cook on low for 6 hours or on high for 3-4 hours.
    • Once cooking time is finished, mix in the zest and juice of the limes and fresh chopped cilantro, to add brightness to these fajitas.

    Serving Suggestions

    • For Traditional Fajitas, use a slotted spoon to drain off excess liquid and then serve the mixture on Homemade Flour Tortillas, with sour cream, cheese, and/or sliced avocado.
    • Serve the mixture and cooking liquid over Instant Pot Quinoa or Instant Pot Rice.
    • Use the steak fajita mixture to make an Easy Burrito Bowl.

    Storage

    Once cooled, any leftover steak fajita mixture can be stored in an airtight container for up to 4 days. You can also opt to freeze the mixture for up to 1 month.

    Ingredients

    • 1 pound flank or sirloin steak sliced against the grain into ½ inch strips
    • 1 tablespoon fajita seasoning
    • 1 red bell pepper thinly sliced
    • 1 green bell pepper thinly sliced
    • 1 yellow bell pepper thinly sliced
    • 1 onion thinly sliced
    • 15 ounces can diced tomatoes with green chiles
    • 1 bunch fresh cilantro chopped (optional)
    • 2 limes juice and zest

    For Serving

    • tortillas, sour cream, Greek yogurt, shredded cheese, etc

    Instructions

    • Place the steak, peppers, and onions in a slow cooker. Season with fajita seasoning and toss to coat.
    • Pour tomatoes over top of mixture and spread out evenly.
    • Cook on low for 6 hours or on high for 3-4 hours.
    • Once cooking time is finished, mix in the zest and juice of the limes and cilantro if using.
    • Serve with a slotted spoon for fajitas or with the cooking liquid over rice or quinoa.

    • 6-8 quart Slow Cooker

    Notes

    Peppers and Onions: Use any color of peppers or a variety of peppers as the recipe states. You can also opt to use a 16-ounce bag of frozen pepper and onion strips in place of fresh peppers and onions--no need to defrost!
    Leftovers: Once cooled, any leftover steak fajita mixture can be stored in an airtight container for up to 4 days. You can also opt to freeze the mixture for up to 1 month.
    For the Fajita Seasoning: use 1 teaspoon chili powder, ½ teaspoon cumin, ½ teaspoon smoked paprika (or regular paprika), ½ teaspoon salt, ¼ teaspoon onion powder, ¼ teaspoon garlic powder, and a dash of cayenne pepper.

      Can I ask a silly question. I haven't used this function yet and have read your other article on how to use medium or high (high plus 15m per hour), so I get that. But do I need to leave the lid of venting? So that the pressure doesn't build up? Can I use my glass lid so I can see what is going on? Its probably a really stupid question but I've no idea. I love your site. Thank you so much for all of these articles and may God bless you!

        Hi Nicole. You can use the glass lid OR you can use your regular Instant Pot Lid (just leave vent knob to venting, not sealed--although the instant pot should never get hot enough to seal anyways) Or you can make this recipe super quickly with my Instant Pot Steak Fajitas

      I buy flank steaks for grilling but have never cooked the strips in a crock. These tacos look super delish.

      Wow this looks so easy. I'm going to have to try it. I usually do chicken because I never knew what kind of beef to use. Flank steak huh? I've never tried those frozen pepper either but I've always wanted to. Great recipe!
