Tips for This Week's Meal Plan

  • On Sunday, prepare an Easy London Broil. Save any leftovers to add to the veggie fajitas on Monday Night. It works perfectly for leftover beef.
  • On Monday, make an extra-large batch of the corn salad and use the leftovers to serve on top of the honey-lime fajitas.
  • If you want to stretch your meals a bit further, make Instant Pot Cilantro Lime Rice or Instant Pot Spanish Rice go along with the Veggie and Chicken Fajitas.
  • This week you will use a lot of Buffalo Chicken and Ranch. If you don't care for the flavor of buffalo, use barbecue sauce instead.
  • Use leftover bacon from the Buffalo Chicken Bake for the club wraps for lunch and/or breakfast tacos for breakfast.
  • Add any leftover peppers and broccoli to the Hunan Beef. And feel free to replace the flank steak with chicken for Hunan Chicken--also delicious!
