Buffalo Chicken Bites deliver everything you love about buffalo chicken in a quick, one-skillet recipe. Bite-sized pieces of chicken are lightly coated in seasoned flour, pan-seared until golden, then tossed with butter and hot sauce for a juicy, saucy chicken dinner or appetizer, ready in minutes.
Inspired by my Chicken Bites recipe, this 15-minute dinner uses the same quick-cooking method but, instead of a sweet and smoky dry rub, finishes the chicken with buttery hot sauce for a spicy buffalo-style twist.

I have been making Buffalo Chicken Bites for as long as I can remember. In fact, this recipe comes from my childhood, although it wasn't until I was a teenager that I really came to appreciate the spicy flavor. It certainly helped that my mom would pile the chicken onto a salad with oven fries and homemade buttermilk ranch dressing. I mean, so good!
Over the years, I have taken my mom's method and tweaked it ever so slightly to make it foolproof for you.
- Cut the chicken evenly. Stick close to 1-inch pieces so the chicken cooks at the same rate. Larger or unevenly cut pieces can leave you with some bites overcooked while others are still finishing.
- Shake off excess seasoning. Before adding the chicken to the skillet, make sure it's lightly coated in the seasoned flour. Too much flour can make the coating gummy rather than browned.
- Give them room. Pan-sear the chicken in a single layer so the bites brown rather than steam. If your skillet is too small, cook them in batches.
- Turn down the heat before building the sauce. Hot sauce can reduce quickly, while honey and butter can scorch over high heat. Lowering the heat lets the chicken finish cooking gently while the sauce thickens and coats every bite.
- Use temperature, not just time. Cook until the chicken reaches 165°F. Because the pieces are small, they can go from juicy to dry fairly quickly, though the sauce makes this recipe a little more forgiving.

Notes on Ingredients

- Chicken: I based the cook time on using boneless, skinless chicken breasts, which are best cooked to 165°F. If you use boneless, skinless chicken thighs, increase the cook time by 1-2 minutes per side and cook until the thighs reach 185°F.
- Flour: You only need 1 tablespoon. It isn't enough to create a heavy breading; instead, it gives the chicken a lightly golden exterior and helps thicken the buffalo sauce just enough to cling. I've also successfully made this recipe using a 1:1 all-purpose gluten-free flour blend. If you want a heavier breading, I would suggest using my Easy Boneless Buffalo Chicken Wing recipe.
- Hot Sauce: Regular hot sauce, such as Texas Pete or Frank's RedHot, works best here. Combined with the spices, butter, and honey, it gives the chicken that classic buffalo flavor without using prepared buffalo wing sauce.
- Smoked Paprika: Smoked paprika adds a subtle smoky depth that works especially well with the hot sauce. Regular paprika works if that's what you have, but the finished chicken won't have quite the same smoky flavor.
- Butter + Honey: Butter and honey round out the heat and give the sauce that classic buffalo-wing richness. Non-dairy butter works well here if needed.
How to Make Buffalo Chicken Bites
Step One: Cube and Season Chicken
Mix the seasoned flour before cutting the chicken so you aren't reaching for spice jars with chicken-covered hands.
- Combine flour and spices in a large bowl and set aside.
- Cut chicken into 1-inch pieces, removing excess fat/gristle.
- Toss the cubed chicken with the seasoned flour to lightly coat.

Step Two: Pan-Sear Chicken
We aren't looking to fully cook the chicken through here, but rather to develop a golden crust before finishing it in the sauce.
- Add a bit of oil to a large skillet and heat for 30-60 seconds, or until it slightly glistens.
- Shake any excess seasoned flour from the chicken, then add it to the skillet in a single layer, working in batches if needed.
- Cook the chicken undisturbed for 2-3 minutes, until golden. Flip and continue to cook for another 2 minutes.

Step Three: Build the Sauce
Finishing the chicken with hot sauce, honey, and butter gives it a classic buttery, slightly spicy buffalo flavor while allowing it to finish cooking through.
- Lower the heat, then add the hot sauce, butter, and honey to the skillet.
- Cook, stirring constantly, for 1-3 minutes, or until the chicken is coated and cooked through.
If the sauce reduces too quickly, reduce the heat further and add an additional tablespoon or two of hot sauce as needed.

Adjusting the Heat
- Milder: Use a mild hot sauce. Serving the bites with ranch or blue cheese dressing also helps temper the heat.
- Medium: Make as written.
- Hotter: Omit the honey and/or add up to ¼ teaspoon cayenne pepper to the flour mixture.
Serving Suggestions
- Classic Appetizer: Serve with blue cheese or ranch dressing for dipping, along with celery and carrots.
- Buffalo Chicken Salad: Serve over greens with tomatoes, carrots, celery, avocado, and ranch. Top with oven fries or air fryer potato cubes for the ultimate salad, in my opinion.
- Wraps: Add chicken, shredded lettuce, shredded cheese, and a drizzle of ranch to a tortilla and wrap it up for a lunch on the go.
- Buffalo Bowls: Serve the chicken over rice and roasted veggies (roasted carrots are great here!) with a drizzle of ranch.
