Tips for this Week's Meal Plan

  • On Sunday, if you would like to prepare rice in the Instant Pot as well as Barbacoa, I recommend preparing the rice while the meat rests. Place the pressure cooked beef in a large bowl with the cooking liquid and cover with foil. Clean the inner pot, prepare rice, and while the pressure is releasing after the rice has cooked shred the beef.
  • No Instant Pot? Layer the ingredients for Barbacoa in slow cooker and cook the beef for 8-10 hours on low or 5-6 hours on high.
  • Cabbage makes a nice addition for tortas. Purchase a large head of cabbage and use to add to barbacoa bowls, burritos, top pizza etc. Or simply use lettuce in place of cabbage.
  • Prepare extra barbacoa and rice on Sunday. Use leftover rice to add to bean burritos to bulk them up. Use leftover barbacoa to make torta sandwiches.
  • For the torta sandwiches, taco pizza, and bean burritos, use homemade refried beans OR canned refried beans. If using homemade refried beans, prepare earlier in the day Monday or over the weekend to make preparing the burritos easy Monday.
  • For the Taco Pizza, use leftover refried beans and leftover barbacoa to make the pizza super simple.
  • Use zucchini for veggie kabobs, summer squash saute, and taco skillet.
  • Marinate extra chicken for Greek chicken. Grill/Bake all at once and then save leftovers make gyros Saturday.
