When the days get shorter and the evenings turn chilly, there's nothing better than cozying up with a warm bowl of soup. From creamy chowders to hearty classics, these soups are perfect for busy nights when you want something nourishing, flavorful, and deeply satisfying. 

Our Favorite Soup Recipes

Made with simple pantry staples, these are the easy soup recipes I turn to again and again during soup season. They all deliver big comfort with minimal effort.

1. Potato Soup

Creamy, cozy, and the very definition of comfort food. This classic soup is rich and creamy and ready in just 30 minutes. Perfect for a cozy weeknight dinner.

2. Sausage Tortellini Soup

Cheese tortellini, tender spinach, and crumbled Italian sausage marry together a creamy tomato broth that tastes like something from a restaurant--only better! And so easy to make!

3. Southwest Turkey Soup

Put that leftover turkey (or chicken) to good use! This zesty, hearty soup is packed with beans, corn, tomatoes, and southwest spices for a meal that's light but full of flavor. A squeeze of lime at the end takes it over the top.

4. Taco Soup

All the flavor of taco night, in one warming pot of soup. Loaded with beef, beans, corn, and bold Tex-Mex seasoning, this crowd-pleasing soup is quick, hearty, and totally customizable with your favorite toppings.

5. Italian Wedding Soup

Tiny meatballs, tender pasta, and greens come together in a delicate, savory broth. It's elegant enough for company but easy enough for a Tuesday night.

6. White Bean Kale Soup

This nourishing, plant-forward soup is cozy without being heavy. Hearty white beans, bright kale, and a flavorful broth make this the kind of feel-good dinner that keeps you full and satisfied.

7. Homemade Chicken Soup From Scratch

A classic for a reason. Made with a whole chicken, a from-scratch broth, and tender veggies, this soup tastes like the one Grandma used to make, with a few surprising additions that take it over the top. Perfect for cold nights, sick days, or anytime comfort is required.

8. Chicken Orzo Soup

A lighter, brighter take on a classic chicken soup. This recipe still delivers soul-satisfying comfort, yet comes together in under 30 minutes.

9. Pastina Soup

With a creamy broth made with blended veggies and tender pasta, this easy soup recipe is known as Italian Penicillin soup because not only will it warm you to the core, but it is filled with nourishing ingredients and easy on the stomach.

10. Lasagna Soup

All the flavors of lasagna, melty cheese, rich tomato broth, Italian sausage, and noodles, without the layering or fuss. It's a family favorite that is incredibly satisfying. Just don't forget to serve garlic toast on the side!

11. Potato Corn Chowder

This chowder is creamy, slightly sweet, and full of hearty potatoes and tender corn. It's one of those soups that hits the sweet spot between comfort food and weeknight practicality.

12. Broccoli Cheddar Soup

Creamy, cheesy, and packed with fresh broccoli, this easy soup will make your family excited to eat their veggies. Serve with crusty bread to soak up every last bit of that rich, cheesy broth.

13. Vegetable Beef Soup

With tender beef, a rich broth, and tons of veggies, this old-fashioned soup comes straight from my Grandpa's recipe box and tastes like a hug in a bowl. Just don't forget the rolls or bread on the side to soak up the incredible broth.

14. Homemade Ramen

Ditch the packets and make this incredibly easy (and flavorful) homemade version of ramen instead. You will never look back!

15. Chicken and Dumplings

One of my favorite soup recipes! This cozy chicken soup with fluffy dumplings takes me right back to my Grandparent's kitchen. And it is easier to make than you may think!

Kristen's Keys for Flavor Packed Soups 

  • Sauté first, simmer second. Taking a few minutes to sauté onions, carrots, and/or garlic builds a deep, rich base.
  • Use quality stock or broth. The main ingredient in any soup is the stock (or broth!) Invest in a quality stock to ensure a deeply flavorful soup. Even better? Opt for homemade chicken stock or homemade vegetable broth to control the quality of ingredients and avoid excessive sodium.
  • Kosher salt is the best choice for soups. Unlike iodized salt, it enhances the natural flavors of the ingredients instead of simply making your soup taste salty.
  • Don't skip the simmer. Even quick cooking soups need a bit of time to simmer, which allows the flavors to concentrate and the ingredints marry together.
  • Brighten the flavor. A squeeze of lemon juice, dash of vinegar, splash of soy sauce, or a sprinkle of fresh herbs right before serving prevents a flat-tasting soup.
