Grilled Mains for Classic Summer Cookouts

These recipes are perfect for when the weather cooperates and backyard grilling is possible. Most can be prepped ahead so all that's left to do when guests arrive is fire up the grill.

The Best Burger Recipe

Homemade Burger on cutting board on bun topped with with lettuce and tomatoes.

A summer cookout without a great burger? Not at my house! I spent years dialing in this recipe so you can skip the guesswork and serve your guests patties that are juicy, flavorful, and fit the bun just right.

Cookout Tip: Form the patties up to 24 hours ahead and keep refrigerated until ready to grill. Place parchment paper between patties so they separate easily.

BBQ Chicken Burger

Two grilled BBQ chicken burgers made with BBQ sauce and cheese on platter topped homemade coleslaw served on sesame buns.

A lighter twist on classic burgers with smoky BBQ flavor and melty cheese packed into every bite. Great for guests who want something different from traditional beef burgers.

Make-Ahead Tip: These chicken burgers can be shaped and refrigerated up to 24 hours prior to grilling as well. Just be sure to cover well to prevent any cross-contamination.

Black Bean Burgers

Homemade Black Bean Patty on Whole Wheat Bun next to lettuce, sliced cheese, and side of homemade fries.

Hearty, flavorful veggie burgers that hold together beautifully without being overly dense. They come together with simple ingredients and even satisfy even non-vegetarians.

Make-Ahead Tip: To grill homemade black bean burgers, the patties should be frozen first, which makes this a great recipe to prep ahead for your summer barbecue!

Grilled BBQ Chicken Breasts

Three grilled BBQ chicken breasts on platter topped with parsley.

Tender, juicy chicken breasts with a sweet and savory rub and caramelized BBQ sauce. A reliable crowd-pleaser that works for both kids and adults.

Make-Ahead Tip: Rub the chicken breasts with the dry rub and store in an airtight container in the refrigerator for up to 24 hours prior to grilling.

Grilled Shrimp Skewers

Honey Garlic Grilled Shrimp Skewers on wooden platter.

Fast-cooking shrimp with fresh, bright flavor that cooks in minutes. These are perfect for rounding out a cookout spread without adding a ton of extra work.

Cookout Tip: Shrimp should be marinated no longer than 60 minutes prior to grilling. So while you can get a jump start on prep, don't plan too far in advance!

Grilled Marinated Chicken Thighs

Grilled marinated chicken thighs on platter topped with minced parsley.

This marinade creates juicy grilled chicken thighs packed with flavor. Thighs are also budget-friendly and stay juicy longer than chicken breasts, making them ideal for feeding a crowd.

Make-Ahead Tip: Place the chicken thighs into the marinade 12-24 hours in advance. When guests arrive, preheat the grill, and dinner is about done.

Slow Cooker & Instant Pot Mains for Easy Entertaining

These recipes are ideal for rainy days, miserably hot weather, or when you simply want the main dish handled hours before guests arrive. No grill involved, but still big BBQ flavor.

Instant Pot BBQ Ribs

Pork Baby Back ribs that have been cooked in Instant Pot on white platter finished with BBQ sauce.

These Instant Pot Ribs are my secret weapon when I want that slow-cooked, fall-off-the-bone tenderness without babysitting a smoker all day. They come out incredibly juicy and flavorful every single time, and nobody ever guesses how easy they are to make. Trust me, once you make ribs this way, you won't go back.

Cookout Tip: Pressure the ribs earlier in the day (hold warm or refrigerate) and if the weather cooperates, finish them up on a grill for the classic charred finish.

Crockpot Pulled Pork

Slow Cooker shredded bbq pulled pork piled on two buns on wooden cutting board.

Inexpensive, incredibly juicy, and feeds a crowd! Crockpot pulled pork (or Instant Pot Pulled Pork) is perfect for any summer BBQ.

Cookout Tip: Don't forget to add homemade coleslaw to your menu -- it is the perfect finish to a pulled pork sandwich.

Crockpot BBQ Pulled Chicken

Crockpot BBQ Chicken piled on toasted bun served next to potato chips.

A lighter spin on the pulled pork recipe, this pulled chicken is great for sandwiches, sliders, or build-your-own plates. Use my Instant Pot BBQ Chicken recipe for the same tender, juicy results.

Cookout Tip: Leave on keep warm so guests can serve themselves as desired.

Instant Pot Bratwursts

wo bratwurst in buns with sauerkraut and mustard next to instant pot.

If you planned to throw brats on the grill but the weather threw a curveball, this Instant Pot Bratwurst recipe will make you happy it rained! The sausage becomes so tender and flavorful as it pressure cooks with beer and sauerkraut.

Cookout Tip: This is another recipe you can keep on warm to let your guests enjoy as they please -- no change to flavor or texture.

Easy Cookout Appetizers

The goal here is simple. Keep everyone happy while the grill heats up or you wait for the stragglers to join the party!

Sour Cream Dill Dip

Stalk of celery being dipped into homemade dill dip made with sour cream and mayonnaise.

My family has included this dip at every summer cookout and summer holiday for decades! It is creamy, herby, and encourages everyone (even the picky eaters) to enjoy some veggies.

Make-Ahead Tip: Make it a day ahead so the flavors have time to develop. You can even prep the crudite in advance -- or grab some pre-chopped veggies to keep it simple.

Summer Tomato Bruschetta

Bruschetta on wooden cutting board topped with tomatoes and basil.

When you summer garden produces more tomatoes than you can handle, make this bruschetta. With fresh basil and garlic, it lets those tomatoes shine and feels a little fancy without actually requiring much effort.

Cookout Tip: Keep the tomato mixture separate and let guests top crostini themselves so the bread stays crisp.

Easy Homemade Chip Dip

Bowl of chip dip made with dried seasonings and sour cream in bowl topped with fresh parsley served next to potato chips.

Every summer party needs a dip or ten, and it doesn't get much easier (or loved) than this classic chip dip made with just a handful of dried spices and a tub of sour cream.

Make-Ahead Tip: Prep up to 24 hours in advance to let the flavors really meld together and keep day of prep to a minimum.

Grilled Jalapeño Poppers

Bacon-wrapped jalapeno poppers on white plate.

Smoky, cheesy, slightly spicy, and always one of the first appetizers gone at a cookout.

Make-Ahead Tip: Assemble up to 24 hours in advance and and refrigerate until ready to grill.

Classic BBQ Sides Everyone Expects

A summer cookout without pasta salad or baked beans just feels suspicious. These sides are easy to prep ahead and pair well with nearly every summer main dish.

Homemade Baked Beans

Baked Beans in large white casserole dish.

These are my Papa baked beans that are sweet, smoky, and pair perfectly with burgers, BBQ, and grilled meats. If my family had a summer cookout without these present, there would be complaints. Lots of complaints.

Make-Ahead Tip: These reheat beautifully, making them ideal for preparing a day or two in advance.

Pasta Salad with Italian Dressing

Mixing bowl with rotini noodles tossed with Italian dressing, peppers, cucumbers, olives, tomatoes, and salad supreme seasoning.

This is not the classic pasta salad from your childhood. There is one addition that makes this the recipe you will be asked to bring to every summer BBQ from here on out.

Make-Ahead Tip: The flavors taste even better when made up to 24 hours in advance. If you find your pasta is a bit dried-out, refresh with a tablespoon or two of additional Italian dressing before serving.

Caprese Pasta Salad

Bowl of Caprese Pasta Salad next to fresh basil.

Fresh mozzarella, tomatoes, and basil turn a simple pasta salad into something bright and summery.

Serving Tip: Make the pasta salad up to 24 hours in advance but wait to add the basil to keep it vibrantly green.

BLT Pasta Salad

Bowl of creamy BLT Pasta Salad with grape tomatoes in background.

Everything you love about a classic BLT, crispy bacon, juicy tomatoes, and a creamy mayo-based dressing, are transformed into the ultimate summer side dish. This one gets requested over and over again for good reason. It's bold, satisfying, and comes together in no time.

Make-Ahead Tip: Don't prep more than 24 hours in advance. Just a few hours ahead will give the flavors time to marry together without the lettuce wilty or the bacon becoming soggy.

Antipasto Pasta Salad

Close up of Antipasto Pasta Salad with tomatoes, onions, and pepperoni.

This Antipasto Pasta Salad is everything I want in a summer side dish, bold, colorful, and loaded with the kind of savory, satisfying flavors that make people go back for a second scoop.

Cookout Tip: This pasta salad travels beautifully, holds up in the heat, and honestly gets better the longer it sits.

Asian Noodle Salad

Noodle Salad in bowl topped with sesame seeds.

With a sweet and savory soy dressing, this cold noodle salad is unexpected in the best way!

Time-Saving Tip: Us a bag of broccoli slaw to speed up the prep.

Classic Potato Salad

Hellmann's Potato Salad in large serving bowl topped with fresh parsley.

Creamy, tangy, and exactly the kind of potato salad people hope to see at a summer cookout. Use my Instant Pot Potato Salad recipe for quicker prep, same flavor.

Make-Ahead Tip: Prep at least 4 hours in advance, overnight is even better.

Italian Potato Salad

Italian potato salad in bowl topped with fresh parsley with lemon and tomatoes in background.

If you need a lighter, mayo-free option on the table, this is the one. Tender baby potatoes and crisp green beans get tossed in a zesty homemade vinaigrette that soaks into every bite.

Serving Note: Without the mayo, this one holds up beautifully in the heat and tastes just as good at room temp as it does chilled.

Bacon Ranch Potato Salad

Bacon Ranch Potato Salad topped with cheese, chives, and bacon.

If you want a potato salad that brings a little extra wow to the table, this Bacon Ranch Potato Salad is your answer. It's got all the creamy, crowd-pleasing comfort of a classic, with smoky bacon and bold ranch flavor that take it completely over the top.

Make-Ahead Tip: While you can prep in advance, wait to stir the bacon and chives into the potato salad right before serving.

Broccoli Apple Salad

Fresh broccoli, apples, and oranges tossed together with orange juice dressing for light and refreshing summer salad.

This unexpected dish fit for anyone with dietary restrictions. It is light, bright, and surprising in the best way.

Make-Ahead Tip: Make several hours ahead so the dressing softens the broccoli slightly without making it soggy (or giving time for the apples to brown). Just wait to top with sunflower seeds until right before serving.

Sour Cream Cucumber Salad

Creamy cucumber salad with dill in blue mixing bowl.

Cool, crisp, and refreshing on hot summer days. This has always been my mom's go to for every summer potluck.

Serving Tip: Serve ice cold straight from the refrigerator for the best flavor -- adding fresh dill is completely optional.

Corn and Tomato Salad

Fresh corn and tomato salad with basil in blue bowl with corn on the cob and grape tomatoes on the counter.

Fresh summer produce shines in this simple side dish that tastes like peak backyard cookout season.

Make-Ahead Tip: Grill the corn on the cob up to 24 hours in advance, assemble the salad up to 12 hours in advance, but wait to add the basil to keep it fresh and vibrant.

Cucumber Tomato Salad

Cucumber, tomato, and red onion salad in white bowl next to sourdough bread with fresh cucumbers and tomatoes in the background.

A light, fresh side that balances the richer dishes classically found at a cookout beautifully. Plus it is a great way to let summer produce shine.

Serving Tip: Holds up well in heat of the summer and tastes just as delicious at room temperature as it does chilled.

Summer Honey Lime Fruit Salad

Fruit Salad in white serving dish topped with fresh mint.

You can never go wrong a fruit salad made with fresh summer produce. But adding a honey lime dressing to the mix makes this simple dish memorable.

Make-Ahead Tip: Prep at least 30 minutes prior to serving and serve within 12 hours of preparation. After that, the fruit begins to get mushy.

Homemade Creamy Coleslaw

Bowl of homemade creamy coleslaw made with green cabbage and shredded carrots.

Can you even have a summer cookout without coleslaw? Not in my book! Whether served on the side or used as a topping for burgers, hot dogs, or pulled pork sandwiches, it is must!

Make-Ahead Tip: While best prepped ahead at least an hour in advance, plan to enjoy homemade coleslaw within 48 hours.

Crowd Pleasing Summer Desserts

These desserts are portable, make-ahead friendly, and ideal for feeding a crowd. Everything a potluck dessert should be!

Mini Cheesecake Bites

Mini Cheesecakes baked in mini muffin tins with vanilla wafer crust on plate topped with fresh blueberries, raspberries, and strawberries.

These mini cheesecakes are the perfect hand-held bite-sized treat made for parties. Bonus? They are incredibly easy to make and taste best after being chilled.

Serving Tip: Keep it festive and patriotic by topping cheesecake bites with fresh blueberries, strawberries, or raspberries for Memorial Day, Labor Day, and 4th of July gatherings.

Blueberry Pie Bars

Sliced blueberry pie bars on wooden cutting board showing shortbread crumble.

Easier than pie, handheld, and made with sweet, summer blueberries. Does it get any better?

Make-Ahead Tip: These slice best after chilling so plan to prepare at least 12 hours in advance. The day before is even better.

Texas Sheet Cake

Sliced Texas Sheet cake with pecans on wooden cutting board.

Rich chocolate cake baked in a large sheet pan, making it ideal for serving a crowd.

Serving Tip: Easy to transport to potlucks and backyard parties. And you don't have to worry about it melting in the summer sun.

Raspberry Cheesecake Bars

Sliced cheesecake bars on wooden cutting board revealing the raspberry swirl throughout the cheesecake batter.

Creamy cheesecake layered with bright raspberry flavor in an easy-to-serve bar form fit for summer.

Homemade Banana Pudding

Classic, creamy banana pudding layered with vanilla wafers and bananas for the ultimate nostalgic dessert.

Serving Tip: Serve in mini cups or trifle dishes for grab and go desserts perfect for a backyard party.

Cherry Crumb Pie

Baked Cherry Crumble pie in clear baking dish next to fresh cherries.

Summer cherries shine in this unique spin on cherry pie. With a creamy custard, flaky pie crust, and buttery crumble, this pie is sweet, tangy, and perfectly balanced.

Make-Ahead Tip: Bake the day before so it has plenty of time to cool and set.

Brown Butter Blondies

Two Browned Butter Blondies with white chocolate chips and walnuts cut into squares on plate.

The browned butter takes these bars over the top with notes of rich caramel. And because they are a handheld treat, they just make sense for a cookout.

Cookout Tip: Skip the chocolate chips and stir in red, white, and blue candies or sprinkles for a patriotic treat perfect for Memorial Day, Labor Day, or the 4th of July.

From-Scratch Brownies

Sliced fudgy brownies on wooden cutting board with chocolate chips scattered around.

This is my Great-Aunt's recipe and it was a staple at every summer picnic in my childhood. The brownies are rich, fudgy, and who doesn't love a brownie?!

Serving Tip: Cut in small squares for a crowd or serve with no-churn vanilla ice cream for the ultimate ending to a hot summer day.

Tips for Planning an Easy Summer Cookout

A successful cookout menu doesn't need dozens of recipes. A few dependable mains, a couple of cold sides, one easy appetizer, and a make-ahead dessert usually does the trick beautifully.

A few simple ways to make entertaining easier:

  • Prep cold salads and desserts the day before.
  • Choose at least one main dish that can stay warm in the slow cooker.
  • Set up a self-serve drink and condiment station to keep traffic out of the kitchen.
  • Use disposable foil pans for easy cleanup when feeding a crowd.
  • Keep extra ice on hand. Every summer gathering somehow runs out faster than expected.

Most importantly, don't stress about making everything perfect. Summer gatherings are designed to be casual and relaxed.

Happy Cooking,
