Tips for This Week's Meal Plan

  • This week will is all about stretching some Tex Mex favorites into creative meals. It is one of my FAVORITE meal plans! So flavorful, so easy and who doesn't love tacos? By the end of the week, I have switched it up for 2 easy non Tex-Mex recipes so you don't get sick of things. ????
  • Be sure to double or triple the amount of taco meat and rice prepared. The barbacoa recipe makes plenty for the week.
  • No Instant Pot? Use the following modifications for Instant Pot recipes.
    • For the Barbacoa: Place all the ingredients in a slow cooker and cook for 8-10 hours on low. Prepare the beef in a slow cooker for 8-10 hours on low.
    • For Refried Beans: Cook dried beans with water, stock, and seasonings in a slow cooker for 8-10 hours. Proceed with recipe as written.
  • On Tuesday, feel free to make extra bean burritos for lunch (or freeze for later if you are sick of refried beans!)
