Tips for this Week's Meal Plan

  • This week there is a recipe for a pork loin roast and one for pork chops. The most cost effective thing to do is to purchase a large pork loin and ask the butcher to slice 4 to 6 (1-inch) pork chops from the pork loin (if they aren't busy, they will typically do this for free with a smile on their faces!)
  • This week puts a lot of produce to use in various ways. Kale, sweet potatoes, Yukon gold potatoes, Brussels sprouts, and apples.
    • Kale: Use for both kale pasta and kale salad. Feel free to use spinach in its place.
    • Sweet Potatoes: For tacos, sausage sheet pan meal, and Hasselback sweet potatoes.
    • Yukon Gold Potatoes: Use for both sheet pan meals and mashed potatoes.
    • Brussels Sprouts: For roasted brussels sprouts and chicken thigh sheet pan meal. Feel free to add them in place of broccoli for the sausage sheet pan meal.
    • Apples: Apple salad, pork and apples, and pork loin roast.
  • Serve leftover pork roast on Tuesday night. If you have enough leftover mashed potatoes, skip the Hasselback sweet potatoes. Otherwise, they make a nice change up and dinner feel new.
  • Leftover sweet potato taco mixture? It is delicious for sweet potato burritos at lunch.
