Enjoy the flavors of a Tagalong Cookie using just 3 ingredients! This no-bake recipe for Chocolate Dipped Peanut Butter Crackers is the easiest way to replicate the flavors of the beloved Girl Scout Tagalong Cookie at home.

Made with creamy peanut butter, salty butter crackers, and rich chocolate, these Copycat Tagalong cookies are the perfect combination of sweet and salty. Enjoy this easy treat year-round or add them to your holiday cookie tray alongside cut-out sugar cookies, candy cane cookies, and saltine toffee.

Kristen's Key Tips for Copycat Tagalongs

  • Recruit helpers. Get your kids, grandkids, or involved to spread peanut butter on the crackers. It's a great way to make memories and speed up the process.
  • Use shelf-stable peanut butter. All-natural peanut butter that needs refrigerator is a bit runny and won't spread on the butter crackers quite as evenly.
  • Opt for REAL chocolate. While chocolate almond bark melts and sets up easily, I recommend using dark, semi-sweet, or milk chocolate for the best flavor.
  • Melt more chocolate than you think you need to make the dipping process easier. Use leftovers for chocolate-covered raisins or nuts to avoid waste.
  • Dip with a fork. A fork is the best tool to dip the sandwich cookie into the chocolate, as the excess chocolate can drip through the prongs of a fork. This trick works great for Peanut Butter Eggs as well.

How to Make Homemade Tagalong Cookies

The following tips are provided to help you achieve perfect results. You will find the ingredient quantities and detailed instructions in the recipe card at the bottom of this post.

  1. Prepare peanut butter crackers. Spread peanut butter on half of the butter crackers. Top each cracker with an additional butter cracker to form a peanut butter cracker sandwich.
  2. Melt chocolate Place the chocolate chips or chopped chocolate into a shallow heat-safe bowl and microwave in 30 second intervals, stirring between each interval, until the chocolate is smooth and melted. Keep in mind that even if the chocolate LOOKS like it has not melted, stirring will help distribute the heat and slowly melt the chocolate, so don't skip stirring between intervals.
  3. Dip peanut butter cracker sandwiches into melted chocolate. Working one cookie at a time, place a sandwich cookie onto a fork and then dip it into the melted chocolate. Tap the fork on the side of the bowl, letting the excess chocolate fall through the prongs of the fork back into the bowl. Place the cookie on a baking sheet lined with wax paper or parchment paper.
  4. Let hardened. Let the cookies sit at room temperature for 2 hours, until the chocolate is fully set.

Recipe Modifications

  • Dairy-Free Tagalongs: Use dairy-free chocolate chips and check the label of your crackers to make these treats dairy-free. Believe it or not, most butter crackers are actually dairy-free!
  • Gluten-Free Tagalongs: Use gluten-free butter crackers.
  • Peanut-Free Tagalongs: Swap the peanut butter out for almond butter or soy butter.
  • Omit the Hydrogenated Oils: While you can opt to use any butter round cracker, I love opting for a version of butter crackers made without hydrogenated oils.
  • Use a Double Boiler: Instead of melting the chocolate in the microwave, rest a heat-safe glass bowl over a pot of simmering water (don't let the bowl touch the water), add the chocolate, and heat over medium-low heat, stirring frequently, until smooth.

Storage Instructions

  • At room temperature: Place the set tagalong cookies into an airtight container and store in a cool place, for up to 5 days at room temperature.
  • In the refrigerator: Place the set tagalongs into an airtight container once the chocolate has fully hardened. Refrigerate for up to 10 days. Keep in mind that when refrigerated (or frozen), the chocolate may look discolored, but the cookies will still be delicious!
  • In the Freezer: Once set, place the copycat tagalongs into a freezer-safe airtight container and freeze for up to 1month. Enjoy straight from the freezer or let the cookies thaw slightly before enjoying.

It only takes 3 ingredients to make these NO BAKE Peanut Butter Ritz Cracker Sandwich Cookies. They are an easy, copycat version of Tagalong Cookies and absolutely delicious.

Ingredients 

  • 60 Butter Crackers
  • 1 pound quality chocolate, *see note
  • 1 cup smooth shelf-stable peanut butter

Instructions 

  • Line a large baking sheet with parchment paper. Place 30 butter crackers on the baking sheet and dollop each cracker with about 2 teaspoons of peanut butter. Top each cracker with an additional cracker.

  • Place 1 pound quality chocolate into a shallow heat-glass bowl and microwave in 30-second intervals, stirring between each interval, until creamy and smooth. Alternatively, place the glass bowl over a pot of simmering water over medium-low heat and melt until smooth, stirring frequently.

  • Working one at a time, place a peanut butter sandwich cracker on a fork, dip into the melted chocolate, and then gently tap the fork on side of bowl to shake excess off. Place the cookie on the prepared baking sheet.

  • Let sit at room temperature for 2 hours to fully harden. In a bind, place the crackers into the refrigerator for 20-30 minutes to set up faster. Then transfer to an airtight container and store at room temperature for up to 5 days.

Notes

Chocolate: Use dark chocolate, semi-sweet chocolate, or milk chocolate. You can opt to use chocolate chips, chocolate chunks, or a chocolate bar cut into bite-size pieces.
Dairy Free Option: Use dairy free chocolate chips  and these Organic organic butter crackers--they are actually dairy free!
Gluten-Free Option: Use gluten-free butter crackers.
Storage: Once set up, store the peanut butter cracker cookies in a sealed container in a cool place, for up to 5 days. Alternatively, store them in an airtight container in the refrigerator for up to 10 days. They can also be frozen in a freezer-safe airtight container for up to 1 month. Keep in mind that if refrigerated or frozen, the chocolate may become discolored (a bit cloudy) but they will still taste delicious.

    If you want a really good treat, instead of crackers, use Vanilla Wafers. My husband’s Lodge makes Christmas and Easter candy and these “Peanut Butter Delights” are a best seller!
