Copycat Fudgsicles

One of my all-time favorite summer treats as a child was a Fudgsicle. Rich, creamy, and full of chocolate, this chocolate-lover begged her mom to buy this treat when the temperatures began to rise.

Fast forward several decades, and I still crave those fudge pops. Only instead of the packaged variety, I prefer homemade fudgesicles for several reasons.

  • Unbeatable Flavor. Creamier, richer, and more chocolate-forward than store-bought fudge pops thanks to use both cocoa powder and chocolate chips.
  • Simple to Make. Whisk, heat, freeze! And you only need a handful of ingredients.
  • Allergy-Friendly Options. This recipe is naturally egg-free and can easily be made dairy-free--without sacrificing ANY flavor!

Ingredients for Homemade Fudgesicles

Ingredients for homemade fudgesicles made with  8 simple ingredients.
  • Milk + Heavy Cream: For a rich and creamy treat, I find using both whole milk and heavy whipping cream yields the richest fudge pop.
  • Cocoa Powder: Use natural Dutch-process cocoa powder, not hot cocoa mixture that is sweetened.
  • Chocolate: For a rich chocolate fudgesicle, the addition of chocolate is key. Semi-sweet chocolate is best for this recipe and I recommend using mini or regular chocolate chips for quick and even melting. If you only have a chocolate bar, chop it into bite-sized pieces.
  • Cornstarch: Helps thicken the mixture. Feel free to use tapioca starch or arrowroot powder in place of cornstarch to keep these treats corn-free.

How to Make Homemade Fudgesicles

The process of making homemade fudgesicles is incredibly easy and very similar to the process of making homemade pudding. But instead of refrigerating the mixture, we are transferring it to popsicle molds to freeze for rich, frozen fudge pops.

  1. Combine. Whisk the sugar, cocoa powder, and cornstarch in a medium saucepan. Add a bit of the milk and whisk until combined and smooth. Slowly drizzle in the remaining milk followed by the heavy cream, whisking until fully combined.
  2. Heat. Place this mixture over medium heat and bring to a gentle simmer, whisking constantly.
  3. Add Chocolate Chips + Vanilla. Place chocolate chips (or chunks of chocolate) in a large mixing bowl or glass measuring cup and place a fine-mesh strainer over the measuring cup. Pour the warmed chocolate milk into a large measuring glass cup over the fine-mesh strainer (this will catch and remove any potential lumps). Add vanilla and mix the mixture together until the chocolate is fully melted and smooth.

  1. Freeze. Let this mixture cool slightly (about 5 minutes) and then pour into popsicle molds. Freeze until frozen solid, which is at least 6 hours.
  2. Unmold and Serve. To remove the Fudgesicle from the popsicle mold, place the popsicle mold under running hot water or in a bowl of hot water for a few seconds. This will allow the pop to slide out of the mold easily.

Dairy-Free Fudgesicles

For a rich and creamy dairy-free fudgesicle, I recommend the following modifications (which my family has enjoyed MANY MANY times!)

  • Use Canned Coconut Milk. Replace milk and heavy creamy with a 15-ounce can of full-fat coconut milk in place of milk.
  • Use Dairy-Free Chocolate: I recommend Guittard or Enjoy Life chocolate chips, but any variety of non-dairy semi-sweet chocolate works.

Ingredients 

  • ¼ cup semi-sweet chocolate chips
  • ¼ cup unsweetened cocoa powder
  • 1 tablespoon cornstarch
  • ¼ cup sugar
  • teaspoon salt
  • 1 ½ cups whole milk
  • ½ cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions 

  • Place ¼ cup semi-sweet chocolate chips in a large mixing bowl or glass measuring cup and place a fine-mesh strainer over the bowl. Set to the side.
  • In a medium saucepan, whisk ¼ cup unsweetened cocoa powder, 1 tablespoon cornstarch, ¼ cup sugar, and ⅛ teaspoon salt until well combined. Slowly whisk in ½ cup of the milk to combine. Slowly drizzle in remaining 1 cup of milk and ½ cup heavy whipping cream
  • Place the saucepan over medium heat and bring to a gentle boil, whisking constantly. Reduce heat to low and simmer until slightly thickened (the mixture should coat the back of a spoon) and the sugar is fully dissolved, whisking constantly. ~1-2 minutes.
  • Remove the chocolate milk mixture from the heat and pour through the strainer over the chocolate chips. Add the vanilla extract and stir until the chocolate chips have melted.
  • Let the mixture cool for 5-10 minutes and then transfer to popsicle molds.
  • Freeze until solid, about 6 hours.
  • To remove a fudgesicle form the mold, place the mold under running hot water for a few seconds.

Notes

Dairy-Free Fudgesicles: Replace the whole milk and heavy cream with a 15 ounce can of full-fat coconut milk and use your favorite dairy-free chocolate chips. 
Heavy Cream: Feel free to replace the heavy cream with additional whole milk but the addition of the heavy cream makes these treats taste incredibly rich and fudgy.
Corn-Free Fudgesicles: Replace the cornstarch with arrowroot powder or tapioca starch.
Storage: Homemade Fudgesicles can be stored in the freezer for up to 3 months. That said, I find they are best enjoyed within 30 days of preparation.
