What You Need to Make London Broil

  • Beef: London Broil is classically made with a top round steak or flank steak. Occasionally, you will find beef labeled as London Broil, which simply means that cut of beef is perfect for making London Broil.
  • Pineapple Juice: To help sweeten and flavor the beef.
  • Soy Sauce + Worcestershire Sauce: For savory, salty undertones.
  • Olive Oil: Extra virgin olive oil is best.
  • To Season: Minced garlic, dried onion flakes, and crushed red pepper flakes. Increase or decrease the amount of red pepper flakes to control the heat as desired.
  • Oven-Safe Digital Thermometer: To guarantee perfect results and prevent overcooking or undercooking the London Broil.

How to Make London Broil

The most important step of making London Broil is marinating the beef. Be sure to allow at least 2 hours (8-12 hours is best) for the beef to sit in the marinade.

  1. Prepare London Broil Marinade. Whisk together the pineapple juice, soy sauce, Worcestershire, olive oil, garlic, red pepper flakes, and dried onion together in a small bowl or shallow dish.
  2. Marinate the Beef. Place the beef into a large storage bag or shallow dish and pour the marinade over the beef, tossing to coat. Let the beef marinate in the refrigerator for at least 2 hours and no longer than 24 hours. I find 8-12 hours is best.

Kristen's Tip

Using a storage bag makes clean-up a breeze, but I do recommend placing the bag in a large bowl or on a rimmed plate before placing it into the refrigerator on the off chance anything were to leak.

  1. Broil London Broil. Remove the beef from the marinade and place on a rimmed baking sheet or broiler pan and discard the marinade. Broil for 5 minutes, flip and continue to broil for 3-4 minutes or until medium-rare.

Alternative Cooking Method

As the name implies, London Broil is typically broiled. However, I have provided instructions in the recipe card for grilling London Broil if desired.

  1. Rest. After broiling, allow the meat to rest on a cutting board, tented with foil, for 10 minutes. This will keep every bite of the London Broil juicy and tender.
  2. Cut London Broil Against the Grain. Once rested, cut the London Broil against the grain into very thin slices, which just means to cut in the opposite direction, or perpendicular, to the parallel lines running down the meat.

Tips for Perfect London Broil

  • Do not skip the marinade. For flavorful London Broil, you need to marinate the beef for at least 2 hours.
  • Don't marinate longer than 24 hours. After 24 hours the marinade will begin to break the beef down, resulting in mushy meat.
  • London Broil is best served medium-rare, or 130-135°F (54-57°C). Cooking any longer will result in dried-out tough beef.
  • Use an oven-safe digital thermometer. It is best insert the probe of an oven-safe digital thermometer into center of the steak and set the alarm for 130-135°F. That will ensure the perfect temperature is reached.

Sweet, savory, and cooked to perfection, this London Broil marinade recipe results in an insanely delicious and tender cut of beef.

Ingredients 

  • cup pineapple juice, canned, not fresh
  • cup low sodium soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons extra virgin olive oil
  • 8 cloves garlic, finely minced
  • ½ tablespoon dried minced onion
  • ½ teaspoon crushed red pepper flakes, more or less to taste
  • 2 pounds round steak or flank steak

Instructions 

  • For the London Broil Marinade, whisk together ⅓ cup pineapple juice, ⅓ cup low sodium soy sauce, 1 tablespoon Worcestershire sauce, 2 tablespoons extra virgin olive oil, 8 cloves garlic, ½ tablespoon dried minced onion, and ½ teaspoon crushed red pepper flakes.
  • Place the beef into a large storage bag or bowl and pour the marinade over the meat. Toss the meat in the marinade to coat and distribute the marinade evenly over the meat. Marinate the beef in the refrigerator for at least 2 hours and up to 24 hours. I find 8-12 hours best.
  • When ready to prepare, preheat the broiler on your oven to high heat and adjust an oven rack to be about 4-5 inches from the flame.
  • Remove the meat from the marinade and place it onto a sheet pan and discard the marinade.
  • Place the sheet pan into the oven and broil for 5 minutes. Remove from the oven and flip the meat and return to the oven and broil for 3-4 minutes or until it reaches an internal temperature of 130-132℉ (55-56℃) for medium-rare.
  • Remove the meat from the oven, place on a cutting board, loosely tent with foil, and allow to rest for 10 minutes. It will rise to about 135℉ (57℃) while resting.
  • After resting the London Broil, cut the beef against the grain (perpendicular to the parallel lines of muscle fiber running down the meat) into very thin slices. and serve immediately.

Notes

Cut of Beef: London Broil is not a cut of beef, but instead a preparation method using either flank or round steak. However, you may find it sold labeled as London Broil.
Temperature of the Meat: London Broil is best served medium-rare, which is an internal temperature of 130-135°F (54-57°C). This is best determined by inserting an oven-safe digital thermometer into the center of the steak and monitoring the temperature.
Dried Onion Flakes: Feel free to use 2 teaspoons of onion powder in place of dried onion flakes. 
Storage: Store leftovers in an airtight container for up to 3 days. Reheat slices in a dry skillet quickly until just warm, or broil unsliced London Broil for 2 minutes per side just to warm through. 
Grill London Broil: Preheat your grill to medium-high. Remove the meat from the marinade and then grill for 7-8 minutes per side, or until the internal temperature reaches 130-135°F (54-57°C). Remove from grill, rest for 10 minutes, cut, and serve.
