Baked Brie is one of those appetizers that looks fancy but takes almost no effort! With just one ingredient and a few minutes in the oven, you end up with a warm, gooey center that begs to be scooped up with crackers or crusty bread.

Warm, melted brie has a way of making even simple get-togethers feel special. It takes less than 5 minutes to prep, it's incredibly versatile with toppings or without, and the end result is rich, melty perfection. Whether it's a holiday gathering or last-minute guests, this recipe is a guaranteed crowd-pleaser.

While it really doesn't get much easier than this recipe for baked brie, I do have a few things to keep in mind before you prepare this appetizer.

  • Brie Options: A wheel works beautifully for that dramatic melty moment, but a wedge will bake up just as well.
  • Toppings are Optional. Honey, jam, or toasted nuts add texture and flavor, but brie on its own is equally delicious.
  • To Score or Not to Score? If you opt to score the wheel of brie before baking, it will be easier to scoop out the melting cheese. Not scoring the cheese, makes for beautiful slicing. It really is foolproof!
  • Bake Right Before Serving. Warm brie is soft, spreadable, and irresistibly creamy-serve it right out of the oven for the best texture and presentation.

How to Bake Brie

While a crazy easy process, I share a few pro-tips in the step-by-step process so you can WOW your guests.

Step One: Prepare Brie

Unwrap the wheel or wedge of brie and remove any parchment or wax paper. Place the cheese on a baking sheet or in a shallow baking dish. Line with parchment paper for easy clean-up if desired.

👉🏻Score if Desired. Using a paring knife, lightly score the rind in a crisscross pattern. This helps the cheese flow once baked, but completely optional. I often don't score the cheese for a "prettier" presentation.

Step Two: Add Jam (Optional)

Spoon about 2-3 tablespoons of jam or preserves over the top. Fig, raspberry, cherry, and apricot are all fantastic pairings with brie.

Step Three: Bake

Bake at for 12-15 minutes, or until the edges are a bit golden and the cheese feels soft when gently pressed. If you added jam, it will be warm and glossy as well.

Step Four: Top and Serve

If desired, top with chopped nuts, fresh herbs, or fresh chopped herbs and then serve immediately with fruit, crackers, etc.

👉🏻Serving Tip: While I could eat this straight off the baking sheet (guilty), it's best served with crostini, crackers, crusty bread, and/or fresh fruit, like apples and grapes.

Flavor Variations

Baked Brie can be served plain or dressed up in a variety of ways. Let your imagination or the following suggestions guide you.

  • Sweet: Top with raspberry, fig, or apricot jam before baking.
  • Nutty: Sprinkle candied nuts, toasted walnuts, pecans, or pistachios after baking.
  • Savory: Add a spoonful of tomato bruschetta or drizzle with olive oil and herbs.
  • Wrapped in Puff Pastry: Wrap an 8-ounce wheel of brie in puff pastry, brush with egg wash, and bake at 350°F for 28-32 minutes until golden.

Storing and Reheating Leftovers

In the VERY unlikely event you have any leftover baked brie, you can save them for another time.

  • Refrigerate: Store any leftovers in an airtight container for up to 5 days.
  • Reheat: Place the leftover brie cheese in an oven-safe baking dish and warm in a 350°F oven until soft again.
  • Get Creative: Slice cold baked brie and tuck it into a grilled cheese sandwich or quesadilla.

This simple recipe for Baked Brie Cheese creates a warm, luscious, melty cheese that is perfect for serving with crackers, fruit, bread and more!

Ingredients 

  • 8 ounce wheel of Brie Cheese, or wedge of Brie cheese

Optional Ingredients

  • 3 tablespoons fig, apricot, cherry, or raspberry jam
  • 2 tablespoons pecans or walnuts, chopped
  • 1 teaspoon fresh rosemary, finely minced
  • 1-2 tablespoons honey or maple syrup

Instructions 

  • Preheat the oven to 350℉ (175℃) and line a small baking sheet or baking dish with parchment paper if desired for easy clean-up.
  • Place the wheel, or wedge, of brie cheese on the center of the prepared dish. If you want to score the wheel of brie, use a small paring knife score just through the rind, trying not to pierce the brie itself. I recommend doing a checkerboard design by cutting 3-4 horizontal and 3-4 vertical lines through the rind of the cheese.
  • If using jam, spoon 2-3 tablespoon of it onto the center of the cheese.
  • Bake the Brie Cheese for 10-12 minutes, or until soft to the touch and the edges are slightly golden.
  • If desired, top the baked brie with toasted nuts and fresh herbs or drizzle with honey or maple syrup.
  • Serve immediately with crackers, fruit, toasted bread, etc

Notes

Brie Cheese: Use any brand/size of brie cheese. You can even use a slice of brie from your deli counter. I typically plan on a 1-ounce serving per person.
Puff Pastry Wrapped Brie: Place an 8-ounce wheel of brie in the center of 1 sheet of defrosted, frozen puff pastry. Top with jam if desired, and then wrap in the puff pastry, trimming off the excess. Brush the exposed puff pastry with an egg wash and then trim off the excess. Bake at 350℉ (175℃) for 28-32 minutes or until the puff pastry is browned and cooked through. 
Storage: If you happen to have any leftover brie, store it in an airtight container in the refrigerator for up to 5 days. You can bake the brie again to rewarm or slice and use it on sandwiches, etc.

    Delicious. I don’t know how you do it , having Thanksgiving and Christmas back to back , so much planning. Here in Canada our Thanksgiving is early October so we get a break from all that food and work. However, made this for movie night and it was great. Going to be on my Xmas table of snacks.
