Kristen's Tips for Ground Beef Stroganoff
To ensure this classic is on the table with the least amount of effort and the most amount of flavor, pay attention to the following tips.
- Use a large, deep pot. You need space to brown the beef and for the noodles to expand. A large Dutch oven works well here.
- Opt for cremini mushrooms over button mushrooms. Sometimes labeled baby bella mushrooms, cremini mushrooms give this quick-cooking earthy, umami-rich flavor.
- Use a wine you would drink or skip it altogether. Adding a bit of dry red wine pairs beautifully with the earthy mushrooms and hearty beef and elevates the overall dish. If you don't cook with alcohol, use additional broth. NEVER use cooking wine, as it filled with added salt, sugar, and preservatives.
- Skip fat-free sour cream. While reduced-fat sour cream is fine, fat-free has an off-putting taste and texture. If you are looking to save on fat, swap out the sour cream for plain, nonfat Greek yogurt.
How to Beef Stroganoff with Ground Beef
Let me walk you through the process of making homemade stroganoff using one pan.
Step One: Brown Beef & Mushrooms
Heat a bit of oil in a large deep pot. Once heated, add in the ground beef and minced onion and cook, until the meat is cooked through and the onion has softened. If needed, drain off any excess grease and return the pot to the pan.
Add in the butter and let melt, then add in the mushrooms and cook for just a couple of minutes to soften. Add the garlic and thyme and lightly toast for 30-60 seconds just to enhance their flavor.

Step Two: Form Roux
A roux sounds fancy, but it is simply flour mixed into fat to form a thick paste and it helps to thicken the stroganoff gravy. Simply sprinkle flour over the beef and mushroom mixture and let cook, stirring constantly, for 1 minute. This gives the flour a nutty undertone.
Step Three: Add Wine and Broth
Hit the pan with a bit of red wine (or additional beef broth) and use a spatula to scrape up any browned bits off the bottom of pan, as the wine cooks down and reduces slightly. Those browned bits are a lot of flavor.
Once the wine has reduced slightly, stir in the beef broth, Worcestershire sauce, and seasonings and bring to a boil.

Step Four: Cook Noodles
Once the liquid is boiling, add in the noodles, cover the pan, lower the heat, and simmer until the noodles are tender. I like to remove the lid to stir every 3 minutes or so to help ensure everything cooks evenly.

Step Five: Add Sour Cream
Once the noodles are tender, remove the pan form the stove and stir in the sour cream until everything is nice and creamy. And dinner is done!

Serving & Storage Suggestions
I absolutely love that Ground Beef Stroganoff recipe cooks the meat, gravy, and noodles all in one pan. And while that alone make a hearty dinner, I like to round out dinner with a vegetable side dish, like green beans almondine, roasted broccoli, or a simple mandarin orange salad.
If you happen to have leftovers, store in an airtight container in the refrigerator for up to 3 days. Keep in mind that the noodles will absorb liquid as they sit, so you may want to add a splash of water or broth before reheating.

Ground Beef Stroganoff

Ingredients
- 1 teaspoon extra virgin olive oil
- 1 pound lean ground beef
- 1 small yellow onion, finely diced
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme leaves
- 2 tablespoons all-purpose flour
- ½ cup dry red wine, or ½ cup additional stock
- 4 cups low-sodium beef stock
- ½ teaspoon kosher salt
- 1 teaspoon pepper
- 1 tablespoon dried onion soup mix
- 2 teaspoons Worcestershire Sauce
- 8 ounce egg noodles
- ¾ cup sour cream, full-fat or reduced-fat
Instructions
- In a large heavy-bottomed saucepan, heat 1 teaspoon extra virgin olive oil for 30-60 seconds over medium-high heat. Once heated add in the ground beef and minced onion brown and cook until the beef is no longer pink, breaking the meat up as it cooks. If needed, remove the pan from the heat and drain off excess grease.
- Return the pan to the heat, add 2 tablespoons unsalted butter and let the butter melt into the beef. Add in the diced mushrooms and cook for 3-4 minutes, or until the mushrooms are tender. Add in 2 cloves garlic and 1 teaspoon dried thyme leaves and cook for 30 seconds just to lightly toast..
- Sprinkle 2 tablespoons all-purpose flour over the mixture and cook for 1 minute, stirring the entire time.
- Add in ½ cup dry red wine (or additional beef stock) and scrape up any browned bits on the bottom of the inner pot. Let cook, stirring often, for 1-2 minutes to reduce the wine slightly.
- Add 4 cups low-sodium beef stock, ½ teaspoon kosher salt, 1 teaspoon pepper, 1 tablespoon dried onion soup mix, and 2 teaspoons Worcestershire Sauce. Bring mixture to a boil.
- Once boiling, stir in 8 ounce egg noodles, cover, and cook for 8-10 minutes, or until the egg noodles are tender. Quickly remove the lid every 3 minutes or so to give the noodles a good stir.
- Remove the heat and stir in the ¾ cup sour cream until combined and creamy. Serve immediately.
