This delicious cucumber tomato salad features juicy tomatoes, sharp red onions, crisp cucumbers, and a light and tangy dressing.
Pair this refreshing cucumber and tomato salad with balsamic pork tenderloin, ribeye steak, marinated Greek chicken, or baked salmon, for meal people will rave over!
Cucumber Tomato Salad is the definition of easy food done right! Unlike my creamy cucumber salad, this version of a cucumber salad swaps out the dairy-based dressing for a light and bright dressing that infuses the cucumbers with intense flavor. Add in some tangy red onion and juicy, sweet tomatoes, and you this easy salad is going to your favorite simple side dish for the summer.
It also happens to be one of the most versatile recipes out there!
- Tomatoes Not in Season? Use grape tomatoes or cherry tomatoes which taste delicious year-round.
- No Hothouse Cucumbers? Use regular cucumbers or homegrown garden cucumbers. I recommend peeling them and removing the seeds for the best texture and flavor in the cucumber tomato salad.
- Craving Cheese? Add crumbled feta cheese or mozzarella pearls to the salad right before serving. Alternatively, place a ball of burrata cheese on a platter and serve the tomato cucumber salad around the ball of cheese.
- Swap out the Fresh Herbs. Instead of adding fresh basil, try fresh dill, parsley, or oregano.
- No Red Wine Vinegar? Replace it with fresh lemon juice or apple cider vinegar.
- Have Vidalia Onions on Hand? They are perfect in place of the red onion in this easy salad recipe.
- Love Olives? I often add up to ¼ cup of pitted kalamata olives to add a briny touch.
- Love Avocado? Add diced Haas avocado to the salad for a rich, creamy element.
Bottom line, it is hard to mess up this Cucumber Tomato Salad. It is perfect for entertaining, a BBQ, or a summer dinner at home!
