This Trader Joe's Dumpling Bake went viral for a reason. With a rich coconut curry broth, tender bok choy, and perfectly cooked potstickers, this dump-and-bake dinner delivers serious flavor with very little effort.

I'm not usually one to jump on viral recipes. But much like making pancakes on a sheet pan and adding cottage cheese to pancake batter, a few viral trends are worth the hype, and this Viral Dumpling Bake is one of them!

Kristen's Keys for Viral Dumpling Bake

After making this dumpling bake more times than I can count, I've learned which details truly matter and added a few personal tweaks along the way to make it even more flavorful, balanced, and family-friendly.

  • Keep the potstickers frozen. Don't thaw before baking, as they can turn soft and fall apart in the broth.
  • Cover tightly with foil. This traps steam and helps the potstickers cook through evenly while keeping the broth creamy.
  • Use full-fat canned coconut milk. Light coconut milk creates a thinner broth that lacks the same rich flavor and texture. Even worse? It can curdle when baked. Ask me how I know!
  • Slice the bok choy thinly. It softens quickly and blends beautifully into the broth instead of staying crunchy and awkward to eat.
  • Adjust the spice level to your family. Red curry paste gives a milder curry flavor while gochujang adds deeper heat. My family personally prefers the flavor of gochujang.

Notes on Ingredients

While this recipe is known as a Trader Joe's Dumpling Bake, you don't actually need to shop at Trader Joe's to make it work. I've tested this recipe with several brands of frozen potstickers and dumplings, and they all bake up beautifully in the flavorful broth.

  • Frozen Potstickers: Any frozen potstickers or gyoza-style dumplings work well -- chicken, pork, shrimp, or vegetable. (Refrigerated or homemade potstickers should be avoided for this recipe.)
  • Bok Choy: Adds freshness and balances the richness of the broth. Baby bok choy is especially tender, but regular bok choy works just fine.
  • Coconut Milk: Full-fat canned coconut milk creates the silky, creamy broth that makes this recipe feel far fancier than the effort involved.
  • Red Curry Paste or Gochujang: Curry paste brings warm Thai-inspired flavor while gochujang adds a slightly smoky heat. Use whichever your family prefers.
  • Soy Sauce: Opt for reduced sodium to control how salty the dumpling bake is.
  • Rice Wine Vinegar: Brightens up the rich broth and makes the flavors pop. Mirin is a good substitute.
  • Fresh Ginger and Garlic: Freshly grated is best here, as they build a ton of flavor quickly.
  • Toasted Sesame Oil: This is the time to use toasted sesame oil (not light or refined), to add rich, nutty undertones to the broth.

How to Make One Pan Dumpling Bake

This one pan dinner really comes together in just one dish! Whisk the broth right in the baking dish, add the veggies and potstickers, cover with foil, and bake. Easy enough for those nights you are running on empty!

Step One: Whisk Base

Add coconut milk, soy sauce, sesame oil, rice wine vinegar, and curry paste or gochujang to a 3-quart or 9x13" baking dish.

Grate the fresh garlic and ginger root right into the baking dish using a Microplane grater. Then whisk everything to evenly combine.

Step Two: Add Bok Choy (Optional)

Add sliced bok choy to the baking dish, stirring to evenly disperse and submerge the veggie.

Step Three: Add Potstickers

Nestle the frozen potstickers, seam side up, in a single layer in the broth. Try not to overlap them too much so they cook evenly.

Step Four: Bake

Cover tightly with foil and bake for 30-35 minutes, or until the dumplings are heated through and the broth is bubbling around the edges. If using mini dumplings, you may want to reduce the bake time to 25 minutes and for larger dumplings, bake closer to 40-45 minutes.

Remove from the oven and let sit for 5 minutes before serving.

Step Five: Finish and Serve

For a bit of satisfying crunch, sprinkle the dumpling bake with fresh sliced green onions and sesame seeds. I also like to drizzle with a bit of chili crisp, but if Sriracha works well here (and is a lot less expensive).

Variations & Modifications

  • Add Protein: Add frozen edamame to to the mix along with the bok choy. Or stir in shredded store-bought or homemade rotisserie chicken, leftover honey-soy salmon bites, or cooked shrimp right before serving for a heartier meal.
  • Add Noodles: Add 2 cups of vegetable broth or chicken stock to the base, nestle 2 packets of ramen noodles (seasoning packets discarded), top with potstickers, and bake as directed.
  • Make it Vegetarian: Use your favorite frozen vegetable dumplings or potstickers.
  • Boost the Vegetables: Mushrooms, shredded carrots, or napa cabbage all work well in this dumpling bake.
  • Turn Down the Heat: Reduce the curry paste slightly and skip the chili crunch for younger kids.
  • Not a Fan of Curry? Use ½-1 tablespoon of gochujang paste in place for a tangy, slightly spice broth. This is my family's preference.
  • Shortcut Option: Use frozen garlic cubes and ginger paste to make prep almost laughably easy.
  • Size of Dumplings: For mini dumplings, reduce the bake time to 25 minutes.

Storage Tips

  • Refrigerator: Store leftovers in an airtight container for up to 3 days.
  • Reheat: Warm gently on the stovetop or in the microwave at 50% power to keep the dumplings from becoming rubbery.
  • Leftover Broth? On the occasion you find yourself with no leftover dumplings, but a bit of broth leftover in your baking dish, don't toss it. It is delicious stirred into a bowl of homemade ramen for additional flavor or drizzle over leftover rice (even vegetable fried rice) for a quick side.

  • 1 (15-oz) can coconut milk, full-fat
  • ¼ cup reduced sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons red curry paste , or 1 tablespoon gochujang
  • 1 teaspoon minced garlic , ~1 clove
  • 2 teaspoons grated ginger
  • 3 cups thinly sliced baby bok choy, 2 small baby bok choy
  • 1 (16-oz) bag frozen potstickers, any variety or size
  • green onions, chili crunch, and sesame seeds, for serving

Instructions 

  • Arrange a rack in the center of an oven and preheat until 375℉.
  • Add 1 (15-oz) can coconut milk, ¼ cup reduced sodium soy sauce, 2 tablespoons rice wine vinegar, 2 teaspoons toasted sesame oil, 2 tablespoons red curry paste , 1 teaspoon minced garlic , and 2 teaspoons grated ginger to a 3-quart or 9x13-inch baking dish, and whisk well to incorporate.

  • Add the sliced bok choy to the dish, stirring to combine.

  • Cover the baking dish tightly with foil and bake for 30-35 minutes, or until the dumplings are tender and warmed though.
  • Remove from the oven, and let sit for 5-10 minutes.
