Simple Greek Pinwheels are an easy-to-make, elegant appetizer made with fresh spinach, roasted red peppers, olives, and feta, and puff pastry.

Serve these Mediterranean Pinwheels with Homemade Tzatziki or Homemade Hummus for your dipping pleasure.

Greek Pinwheels

These Greek Pinwheels are the perfect appetizer to serve when you are looking to impress, or just hanging with your friends enjoying a glass or two of wine.

They are made with flaky, buttery puff pastry that is rolled around spinach, roasted red peppers, Kalamata olives, feta, and oregano. Baked to golden perfection, these Greek rolls are filled with flavor, texture, and classic Greek flavors. But most importantly, they are always an appetizer that people devour.

Ingredients Needed

  • Puff Pastry: Using frozen or refrigerated puff pastry makes this appetizer incredibly easy to prepare. I purchase a brand without hydrogenated oils that both Walmart and my local grocery chain carry. If you do use frozen puff pastry, be sure to place it in the refrigerator to thaw the day before making.
  • Olives: For classic Greek flavors, use Kalamata olives.
  • Roasted Red Peppers: Use jarred whole roasted red peppers. They lend a smokey taste to the Greek Rolls.
  • Spinach: Fresh baby spinach is best. If you need to use frozen spinach, be sure to fully defrost and wring out all excess moisture. Skipping that step will result in a soggy roll.
  • Feta: Use crumbled feta, or crumble up a block of feta to give these pinwheels a salty finish.
  • Dipping Sauce: These Greek Pinwheels are delicious plain, but also fabulous when served with a side of Homemade Tzatziki Sauce or Instant Pot Hummus.

How to make Greek Pinwheels

  • If needed, defrost the puff pastry in the refrigerator overnight.
  • Once defrosted, roll out the puff pastry on a floured surface or parchment paper. You just want the dough to be even and remove the creases from the packaging.
  • Use a paper towel to pat dry the spinach, olives, and roasted red peppers--this will help prevent the pastry from becoming soggy.
  • Spread the pastry with a thin layer of spinach. Then top with strips of roasted red pepper, Kalamata olives, and sprinkle with dried oregano and a generous handful of feta cheese.
  • Tightly roll up the puff pastry lengthwise.

  • Slice the log into 1-inch slices and place onto a baking sheet that has been lined with parchment paper or a Silpat.
  • Bake until golden brown.

Make-Ahead Directions

These Greek Rolls are a perfect appetizer to prep in advance and bake when right before entertaining.

Prepare the recipe as directed up to baking. Place the sliced rolls on a sheet pan and cover tightly with plastic wrap. Refrigerate for up to 24 hours before slicing and baking as directed, any longer and the puff pastry may get soggy. Alternatively, you can place the sheet pan with unbaked rolls into the freezer and freeze until solid. Transfer to a freezer-safe bag or container and freeze for up to 30 days. When ready to bake, place the frozen pastries on a sheet pan and let them sit at room temperature for about 20 minutes to thaw slightly, and then bake as directed.

Ingredients 

For the Greek Rolls

  • 1 (8 oz) sheet of puff pastry, thawed
  • 2 cups fresh spinach leaves
  • 16 oz roasted red peppers, drained and dried on paper towels
  • ½ cup kalamata olives, sliced in half
  • ½ cup feta cheese, crumbled
  • 1 teaspoon dried oregano
  • 1 cup Homemade Tzatziki Sauce, or Hummus

Instructions 

  • Preheat oven to 350℉ (175℃).
  • Lay a silpat or parchment paper on a baking sheet.
  • On parchment paper or a lightly floured surface, roll out the puff pastry, just to remove any creases from being folded. Gently dry the spinach, olives, and peppers with a paper towel to remove excess moisture. Spread the spinach over the puff pastry, covering the surface of the pastry. Next layer the roasted red pepper and olives over the spinach. Sprinkle with feta and oregano.
  • Roll up the puff pastry lengthwise. Slice into ½ inch slices and place onto the prepared baking sheet.
  • Bake for 20-23 minutes or until golden brown.
  • Serve pinwheels with dip.

Notes

  • If you can't use fresh spinach, you can use ½ cup defrosted cooked spinach, just be sure to drain well.
  • Feel free to omit the Kalamata olives and use your favorite olives in these Greek roll-ups.
  • I have not tried making these rolls with crescent rolls in place of the puff pastry, but my guess is it would still work and be delicious.
  • Tzatziki Sauce Recipe: Grate ½ English cucumber, sprinkle with salt, and then drain off excess liquid after 10 minutes. Mix together with 2 cups plain Greek yogurt, 3 cloves minced garlic, ½ teaspoon salt, 2 tablespoons fresh dill minced, 1 tablespoon olive oil, and 1 tablespoon fresh lemon juice. 
  • Store leftovers in an airtight container for up to 3 days. Reheat in a 350 degree F oven until warm.

      1. Hi Jennefer! I would bake BEFORE freezing, and then let cool. Freeze on baking sheet until frozen solid and then pop into freezer bag/air tight container. To reheat, place on baking sheet frozen and bake at 375 until warmed through. Enjoy!
