Whether hosting brunch, serving a crowd for breakfast, or tailgating, these Breakfast Sliders are a breakfast sandwich that no one can resist. Made with soft rolls, fluffy eggs, savory sausage, and melted cheese, they are hearty and satisfying. But it's the maple butter glaze that seals the deal!

When it comes to portable breakfast options, we love Egg McMuffins, breakfast burritos, and baked oatmeal cups for day to day. But when entertaining, I turn to these Breakfast Sliders! They are sweet, savory, portable, and always the first thing to disappear!

A few small details make a big difference in terms of flavor and ease. Paying attention now, will help ensure perfect results with the least amount of effort involved.

  • Hawaiian Rolls are best, but don't panic if you can't find them. The sweet flavor of the rolls plays well with the savory components of the dish, but because we are adding a maple glaze, any slider bun or roll works well here.
  • Bake the eggs. This keeps the prep work to a minimal and makes the sliders easy to layer and cut.
  • Prevent soggy sliders. Breakfast sliders are a make-ahead friendly brunch option as long as you wait to add the glaze until ready to bake. Adding it too early can make the buns soggy.

How to Make Breakfast Sliders

While an easy recipe, this section will walk you through the step-by-step process, providing helpful tips along the way.

Step One: Prepare Eggs

While you can scramble the eggs in a pan, I highly recommend using my trick of baking eggs in the same pan in which you will bake these sandwiches, making this process much easier. To do this, whisk the eggs with cream and seasonings, pour into a pan lined with parchment paper, and bake until set. The eggs will be uniform and fluffy and fit perfectly on the slider buns.

Step Two: Prepare Sausage

While the eggs are baking, use that time to cook the breakfast sausage. Alternatively, you bake bacon along with the eggs to use in place of the sausage or replace with sliced ham.

Step Three: Assemble Breakfast Sliders

Once the eggs are prepared, use the parchment paper to lift them out of the pan. Place the bottom halves of the rolls in the same pan. Add the baked eggs, cooked breakfast sausage (or meat of choice), and slices of cheese, then place the tops of the rolls on.

????????Make-Ahead Tip: If you are assembling these sliders in advance stop here and cover the pan tightly with plastic wrap and refrigerate up to 24 hours.

Step Five: Glaze Sliders

When ready to bake the sliders, combine melted butter with maple syrup in a small bowl then brush it generously over the tops of the rolls.

Step Six: Bake and Serve

Bake until the rolls are lightly golden and the cheese is fully melted. We want them just a bit toasty, yet still soft and fluffy. Let cool for a few minutes, then slice and serve while warm.

????????Leisurely entertaining? While best warm, you can safely leave the sliders sit at room temperature for up to 2 hours.

Tips for Storing and Prepping Ahead

  • Leftovers: Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, cover with foil and warm in a 300°F oven for 15-20 minutes so they heat through without drying out.
  • Make-Ahead Instructions: To prep ahead, assemble the sliders completely up to brushing with the glaze. Cover tightly and refrigerate for up to 24 hours. Before baking, let the sliders sit at room temperature for 30 minutes, then brush with the maple butter and bake as directed.

Easy Hawaiian Roll Breakfast Sliders

Made with eggs, sausage, and cheese and finished with a sweet maple glaze, these sweet and savory Breakfast Sliders are everything you crave in breakfast.

Ingredients 

  • 12 Hawaiian slider buns, (1 package)
  • 8 large eggs
  • ¼ cup cream, or milk
  • ½ teaspoon kosher salt
  • ½ pound breakfast sausage
  • 8-10 slices sharp cheddar cheese
  • 2 tablespoons unsalted butter, melted
  • ½ tablespoon maple syrup

Instructions 

  • Preheat oven to 350℉ (185℃). Line a 7x11 pan with parchment paper.
  • Whisk together 8 large eggs, ¼ cup cream, and ½ teaspoon kosher salt. Pour into prepared pan and bake until eggs are set or for 13-16 minutes. When the eggs are finished baking, allow the eggs to cool for 5 minutes in the pan then carefully lift the parchment paper out of the pan.

  • While the eggs are baking, brown ½ pound breakfast sausage over medium heat until cooked through, breaking up into small pieces as the sausage cooks. Drain off any excess grease.

  • Place the bottom of the slider buns into the dish the eggs baked in. Place the baked eggs on the slider buns, removing the parchment paper. Trim off any excess eggs if needed. Top with the crumbled sausage and then top with the sliced cheese, overlapping the cheese slightly. Top with the slider bun tops.

  • Whisk together 2 tablespoons unsalted butter and ½ tablespoon maple syrup and then brush over the slider tops.

  • Cover with foil and bake for 20 minutes. Remove foil and continue to bake for 5 minutes, or until the cheese is melted and the buns are lightly toasted.

Notes

Slider Buns: I prefer Hawaiian Sweet Rolls for this recipe, but any variety of slider buns work. Most packages of sliders will fit perfectly into a 7x11 pan.
Eggs: If you do not like the texture of baked eggs, cook the egg mixture over low heat in a saute pan, cooking and scrambling the eggs until they reach a soft set scrambled egg.
Cheese: Swiss, Provolone, or even Pepper Jack cheese work well in place of cheddar if desired.
Sausage: Use any breakfast sausage you like, or replace the sausage with ham, Canadian bacon, or cooked bacon slices. Or omit altogether. 
Foil: You don't need to cover the sliders with foil, but it does keep the rolls soft and fluffy. If you skip the foil, only bake for 17-20 minutes. 
Serving/Storage: Breakfast Sliders are best served warm but can be held at room temperature for up to 2 hours. After that, refrigerate for up to 3 days and toast in the oven until warm to reheat.
Make-Ahead Instructions: Assemble up to glazing. Cover the baking dish tightly with plastic wrap or foil and refrigerate for up to 24 hours. When ready to bake, remove the baking dish from the refrigerator and let the sliders sit at room temperature for 30 minutes. Remove the plastic wrap or foil from the sliders, brush with the maple butter, and bake as directed.

    1. Hi Sue! To be honest, I have not frozen these before, but in theory it should work okay. I would prepare eggs and meat and let cool COMPLETELY! Assemble sandwiches in freezer safe baking, but do not glaze. Cover tightly and freeze for up to 1 month. Remove pan from from freezer while oven preheats, then bake from frozen at 350°F for 30-40 minutes, covered until mostly warmed through. Uncover foil, brush with the maple butter, and bake for 10 minutes longer until warmed through and slightly browned.

    My FAVORITE breakfast sandwich by far! Better than drive-thru! I love how easy the egg preparation is, and then everything goes back into the same dish for minimal clean-up. Win-win-win! ????

    Have made this twice. Just scramble the eggs versus oven but the maple butter puts this over the top. Family of 6 love this.
