Thanksgiving Egg Rolls are the most creative Thanksgiving leftover recipe ever. All your favorite leftovers -- turkey, mashed potatoes, and stuffing -- rolled up in a wonton wrapper and baked until crispy.

When it comes to Thanksgiving leftovers, you may think my Pierogi Lasagna or Thanksgiving Pizza are unique, but NOTHING tops these Thanksgiving Egg Rolls in creativity.
Stuffed with leftover mashed potatoes, bread stuffing, and roast turkey, and then served with a side of leftover turkey gravy or cranberry orange sauce, these Thanksgiving egg rolls deliver the ultimate flavor in a hand-held bite.
It is one recipe I look forward to making all year long. I mean, crispy, crunchy, savory, salty, and a little sweet -- what is not to love?!
How to Make Thanksgiving Egg Rolls
The following tips are provided to help you achieve perfect results. You will find the ingredient quantities and detailed instructions in the recipe card at the bottom of this post.
- Fill Each Egg Roll. Spread 1-2 tablespoons of mashed potatoes onto the center of the egg roll wrapper. Top the mashed potatoes with 1-2 tablespoons leftover crumbled stuffing and 1-2 tablespoons finely diced turkey. Be careful not to overstuff, which can make rolling the egg rolls difficult.
- Roll the Egg Rolls. Roll up the egg roll wrapper by folding up the bottom of the wrapper, then folding in the sides to resemble an envelope. Roll up to close the egg roll and place the assembled egg roll onto a greased sheet pan.
- Brush with Egg Wash. Brush the egg rolls with an egg wash or spray with cooking spray to help them brown and crisp up evenly.
- Bake. Place the egg rolls into the oven and bake until crispy, flipping egg rolls midway through baking.
- Serve. Serve the Thanksgiving Egg Rolls with a side of leftover turkey gravy or leftover cranberry orange sauce for dipping.

A Few Helpful Tips
- Use the Air Fryer. Skip the egg wash; instead, spray the assembled egg rolls with cooking spray. Air fry for 3 minutes at 400°F. Flip and air fry for 3-4 more minutes at 400°F, or until crispy.
- Prep-Ahead. You can assemble these egg rolls up to 24 hours before baking or air frying. Roll up the egg rolls as directed and place them in an airtight container. Store in the refrigerator for up to 24 hours. When ready to bake, brush with the egg wash and bake as directed. Alternatively, spray with cooking spray and air fry as directed.
- Where to Find Egg Roll Wrappers--sold in the refrigerated section of most grocery stores.
- Egg-Free Modifications: Egg roll wrappers are typically egg-free, but an egg wash helps crisp them and seal the egg rolls. If you have an egg allergy, use water to help seal the egg rolls, then brush with oil or spray with cooking spray to help them crisp before baking.
- Warm the Mashed Potatoes to make them easier to spread. If the mashed potatoes are too thick, add a bit of warmed milk to thin. Any mashed potatoes you have on hand work here -- slow cooker mashed potatoes, Instant Pot mashed potatoes, or Yukon Gold mashed potatoes.
- Get Creative. Use any leftovers you have! Add corn casserole to the mix, or make a sweet-and-savory Thanksgiving egg roll pairing sweet potato casserole with turkey. Leftover baked brie or whipped brie? Slice it and add it to the egg roll with leftover turkey and cranberry sauce. So good!

- 2-½ cups leftover mashed potatoes
- 1 large egg
- 1-½ cups leftover stuffing
- 1-½ cups chopped turkey
- 20 egg roll wrappers
- cooking spray
Instructions
- Preheat oven to 400℉. Spray a large rimmed baking sheet with cooking spray and set aside.

- Brush the outer perimeter of the wrapper with the egg wash or plain water. Roll up egg roll like an envelope by folding the bottom up over the filling. Fold the 2 sides of the egg roll wrapper into the center, and then roll the egg roll up. Place the egg rolls onto a baking sheet. Repeat the process for each egg roll.
- Brush the egg rolls with the remaining egg wash or spray with cooking spray.
- Bake the egg rolls for 20 minutes, flipping over after 12 minutes, or until the egg roll wrappers are golden and warmed through.
- Serve with leftover gravy or cranberry sauce for dipping.

So incredibly delicious!!
This is so incredibly smart and fun. I love that you bake the egg rolls instead of frying them. We absolutely need to do this the weekend after Thanksgiving.
