Meal Plan 44

This Meal Plan, like all my meal plans, includes 7 delicious dinners, ideas for breakfastlunch, and snacks, meal-prep ideas and a shopping list. I truly want to help you make home-cooked meals easier!

Money/Time Saving Tips

  • This week calls for 3 -4 pounds of ground beef. It is a good idea to purchase a large pack to save money. I typically use 2 pounds for chili, and 1 pound for taco meat (when served as tacos and on taco pizza, it can stretch--especially with refried beans on the side.) Keep in mind ground turkey/chicken works well in recipes calling for ground beef.
  • Use leftover chili to make tamale pie--just add corn and cornbread topping OR you can make filling as directed (the ingredient list assumes you are NOT using leftover chili--but I typically do to make it super speedy!)
  • On Monday, use romaine or iceberg lettuce to make a side salad, as that is perfect for taco night as well. If you have leftover greens on Wednesday, serve a salad on side of Tamale Pie. Otherwise serve with fruit of choice.
  • On Tuesday, prepare extra taco meat and set aside some refried beans. Use them both, along leftover taco toppings, to make taco pizza on Friday--so good!
  • If you have leftover avocado from tacos, use it to make tuna avocado salad for lunch.
  • Use green beans for both the chicken skillet and Hunan Shrimp.
  • Make extra rice with the chicken skillet to serve with the Hunan Shrimp as well.
  • Don't care for shrimp? Use beef or chicken to make Hunan Beef or Hunan Chicken (you can keep green beans with it or change out for veggies of choice).
  • For cornbread, use my homemade cornbread recipe or two boxes of your favorite for both chili and tamale pie.

How to Use Meal Plans

Each meal plan includes a printable guide complete with a shopping list and tips to cut back on prep and minimize food waste. I also base each meal plan based on seasonal produce.

  • Print the meal plan to hang on your fridge and print each recipe to make your grocery list and prepare dinner! You can hit the name of each recipe on the meal plan and it will take you directly to that recipe!
  • Right-click each link and hit open in a new tab so you have all the recipes open at once. Hit the jump to recipe and print off recipes. There is a check box to check off ingredients you already have. This will make shopping a bit easier.
  • Be sure review meal plan for time-saving tips and key grocery lists. Keep in mind I only create the grocery lists based on dinner and assuming your spice cabinet is stocked with common spices.

  1. I donโ€™t want the weekly meals. How would I remove that. Iโ€™m looking for vegan recipes without oils. Can you tell me what to use instead example the oven roasted potatoes has 3Tbls of oil. Will broth work to hold spices to potatoes or something else

    1. Hi Adrienne! You are not signed up to receive meal plans. I do feature them in a weekly email that includes the best of the week. You can opt not to look at the meal plan if you don't care to ๐Ÿ™‚ As for the roasted potatoes, that is a hard one. I would roast on parchment paper with the spice. The spices won't adhere as well and the potatoes will not get as crispy. You could try a light spray of olive oil spray if you aren't opposed to a small amount of oil.
