Kristen's Key Tips

This Buffalo Chicken Pizza is one of my family's all-time favorite pizza recipes. Think all the flavor of buffalo wings smothered in cheese and piled on a tender pizza crust. And because it is such a favorite, I make it often and have learned a few key things that help ensure success.

  • Roll the pizza dough out evenly. This helps the crust cook evenly and gives you the perfect proportions of sauce, chicken, cheese, and crust.
  • Go easy on the sauce. After tossing the chicken with buffalo sauce, use a slotted spoon to transfer the buffalo chicken to the pizza crust. This will keep your pizza from getting soggy.
  • Let the pizza cool before slicing. After baking, let the pizza cool for 5-10 minutes to let the cheese set, so it doesn't slide off the slices as you cut.

Happy Cooking! xo Kristen

Notes on Ingredients

Ingredients for buffalo chicken pizza labeled on counter.
  • Pizza Dough: For this recipe, you will need 1 pound of store-bought or homemade pizza dough.
  • Chicken: This recipe is perfect for leftover cooked chicken, turning it into something truly spectacular. Use any leftover cooked chicken, such as store-bought or homemade rotisserie chicken, baked split chicken breasts, or Instant Pot chicken breasts
  • Cheese: For the best flavor and melt, I recommend a mix of shredded cheddar, Monterey Jack, or Colby, plus mozzarella to top the pizza.
  • Buffalo Sauce: This recipe includes the ingredients and directions for making homemade buffalo sauce using hot sauce, vinegar, garlic powder, honey, and butter. It is super quick to make, but feel free to use your favorite store-bought buffalo wing sauce.
  • Dressing: Like buffalo wings, this pizza isn't complete without a drizzle of buttermilk ranch dressing or blue cheese dressing. Use what you like!

How to Make Buffalo Chicken Pizza

  1. Prepare Buffalo Sauce (Optional). If you are opting to make homemade buffalo sauce, combine the hot sauce, vinegar, Worcestershire, butter, and garlic powder in a small saucepan. Bring the mixture to a simmer and cook until butter melts. Remove from the heat and whisk in the honey. By the time the oven has preheated, it will be ready to go!

  1. Toss Chicken with Buffalo Sauce. Toss diced or shredded cooked chicken with the buffalo sauce until it is evenly coated.

  1. Assemble Pizza. Roll the pizza dough out into a 12-inch circle and transfer it to a lightly greased pizza pan. Top with an even layer of the sauced chicken and then sprinkle the cheese evenly over the chicken.

  1. Bake Until Golden. Bake the buffalo chicken pizza until the cheese has melted and the crust is golden brown.
  2. Serve. Let sit for 5-10 minutes after baking, then slice, and then top with a swirl of ranch or bleu cheese.

Recipe Modifications

  • Love Blue Cheese? Sprinkle crumbled blue cheese over the pizza before baking, in addition to or in place of some of the shredded cheddar and shredded mozzarella.
  • Adjust the Spice Level. If you like things really spicy, add a pinch of cayenne pepper to the sauce while simmering. If you like things on the milder side, add a bit more honey to the sauce to balance out
  • Leftover Buffalo Chicken? If you have leftover Instant Pot Buffalo Chicken or leftover buffalo chicken dip, use it in place of the leftover cooked chicken and homemade sauce.
  • Additional Topping Ideas. If desired, sprinkle finely minced red onion over the buffalo chicken layer, or top the baked pizza with sliced green onion and cilantro.

Instructions

  • Preheat the oven to 425℉ (220℃) and lightly grease a 12-inch pizza pan.
