This Buffalo Chicken Pizza is one of my family's all-time favorite pizza recipes. Think buffalo wings smothered in cheese--yum! While easy to make, I have a few pro-tips to ensure perfect results!

  • Roll the Pizza Dough Out Evenly. This will help the crust cook evenly and give you the perfect proportions of sauce to chicken to cheese to crust. 
  • Don't Over Sauce! After tossing the chicken with the buffalo sauce, it is best to use a slotted spoon to transfer the buffalo chicken to the pizza crust. This will ensure your pizza doesn't end up soggy!
  • Let Pizza Cool Before Slicing. After baking, let the pizza cool for 5-10 minutes, which will allow the cheese to set, preventing it from sliding off the slices of pizza as it is cut.

  • Pizza Dough: For this recipe, you will need 1 pound of store-bought or homemade pizza dough.
  • Chicken: This is the perfect time to use leftover chicken to transform it into something truly spectacular. Use any leftover cooked chicken like store-bought or homemade rotisserie chicken, baked split chicken breasts, or Instant Pot chicken breasts
  • Cheese: For the best flavor and melting factor, I recommend using a combination of shredded cheddar, Monterey Jack, or Colby cheese, along with mozzarella cheese to top this pizza.
  • Buffalo Sauce: This recipe includes the ingredients and directions for making homemade buffalo sauce using hot sauce, vinegar, garlic powder, honey, and butter. It is super quick to make, but feel free to use your favorite store-bought buffalo wing sauce.
  • Dressing: Just like buffalo wings, this pizza is not complete without a drizzle of ranch dressing, or blue cheese dressing. Use what you like!

How to Make Buffalo Chicken Pizza

The following tips are provided to help you achieve perfect results. You will find the ingredient quantities and detailed instructions in the recipe card at the bottom of this post.

  1. Prepare Buffalo Sauce (Optional). If you are opting to make homemade buffalo sauce, combine the hot sauce, vinegar, Worcestershire, butter, and garlic powder in a small saucepan. Bring the mixture to a simmer and cook until butter melts. Remove from the heat and whisk in the honey. By the time the oven has preheated, it will be ready to go!

  1. Toss Chicken with Buffalo Sauce. Toss diced or shredded cooked chicken with the buffalo sauce until it is evenly coated.

  1. Assemble Pizza. Roll the pizza dough out into a 12-inch circle and transfer it to a lightly greased pizza pan. Top with an even layer of the sauced chicken and then sprinkle the cheese evenly over the chicken.

  1. Bake Until Golden. Bake the buffalo chicken pizza until the cheese has melted and the crust is golden brown.
  2. Serve. Let sit for 5-10 minutes after baking, then slice, and then top with a swirl of ranch or bleu cheese.

Recipe Modifications

  • Love Blue Cheese? Sprinkle crumbled blue cheese over the pizza before baking in addition to or in place of part of the shredded cheddar and shredded mozzarella cheese. 
  • Adjust the Spice Level. If you like things really spicy, add a pinch of cayenne pepper to the sauce while simmering. If you like things on the milder side, add a bit more honey to the sauce to balance out 
  • Leftover Buffalo Chicken? If you happen to have leftover Instant Pot Buffalo Chicken or leftover buffalo chicken dip, use that in place of the leftover cooked chicken and homemade sauce. 
  • Additional Topping Ideas. If desired, sprinkle finely minced red onion over the buffalo chicken layer or top the baked pizza with sliced green onion and cilantro if desired.

Ingredients 

  • 1 pound pizza dough
  • ¾ cup buffalo sauce , homemade or store-bought
  • 2 cups cooked chicken, diced or shredded
  • 4 ounces sharp cheddar cheese, grated
  • 4 ounces mozzarella cheese, grated
  • ½ cup ranch dressing or blue cheese dressing, optional

Homemade Buffalo Sauce

  • ½ cup cayenne pepper hot sauce, such as Franks
  • ½ tablespoon apple cider vinegar
  • 2 tablespoons unsalted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce, or pinch of salt
  • ½ tablespoon honey

Instructions 

  • Preheat the oven to 425℉ (220℃) and lightly grease a 12-inch pizza pan.
  • If making Homemade Buffalo Sauce, combine ½ cup cayenne pepper hot sauce, ½ tablespoon apple cider vinegar, 2 tablespoons unsalted butter, ½ teaspoon garlic powder, and ½ teaspoon Worcestershire sauce together in medium saucepan. Bring to a simmer over medium-high heat. Once simmering and the butter has melted, turn off the heat. Add ½ tablespoon honey and stir to combine. Skip this step if using prepared buffalo sauce.

  • In a medium mixing bowl, combine 2 cups cooked chicken (diced or shredded) with ¾ cup buffalo sauce and toss until the chicken is coated in the sauce.
  • On a lightly floured surface, roll out 1 pound pizza dough, using a rolling pin to about ¼-inch thickness. Carefully transfer the crust to the greased pan.

  • Using a slotted spoon, to remove excess sauce from the buffalo chicken mixture, transfer the chicken onto the prepared crust and spread the mixture evenly over the pizza crust, leaving about a ½ to 1-inch border around the edges of the pizza crust. Sprinkle 4 ounces sharp cheddar cheese (shredded) and 4 ounces mozzarella cheese (shredded) evenly over the chicken mixture to cover.

  • Bake for 15-18 minutes, or until crust is browned evenly and cheese is fully melted.

  • Remove the pizza from the oven and let cool for 10 minutes before slicing. Serve the pizza with a drizzle or a side of dressing as desired.

Notes

Chicken Option: Use Instant Pot Buffalo Chicken in place of leftover chicken, hot sauce, garlic powder, and butter. 
Storage: Leftover pizza can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a 300℉/150℃ oven for 10-12 minutes, or until warmed through.

    Ive never thought to have buffalo chicken on pizza. But WOW what a terrific flavor and such a GREAT way to have buffalo chicken. So so good.
